Fingers crossed I'll get something 6+% and drinkable!
1072??

My TC went down to 998 or there abouts. If yours does that then you will get something around 10%.

Yep 1.072 @ 26degC ... 10% lumme! I don't think it'll go down that low though as its ale yeast not wine or champagne.. But I could be very wrong! Its gone off fizzing like I don't know what! With the cinnamon in there its smelling like alcoholic apple pie at the moment!

i would guess that the ale yeast will get it down a fair way...i did one with wine yeast that went down to 990 and one with allinsons bread yeast that still got down to 995!!

Ok now i'm getting a little worried! :shock:

I was figuring it'd finnish somewhere between 1.014-1.020.... making it around the 6-7.5% mark!
Still its going to be fun finding out!
At the moment it is still bubbling away like nothing I've seen so I'll let you know how it turns out! i put alot of sugar in as I didn't want something too dry... a medium Cider was the plan... oops! #-o

Yer tiz......I havent got the scientific process as I cant be arsed to type it up but these are proven and repeated recipes, so you dont need to look further down this thread to see if it comes out alright.


NICEARSE
4 litres apple juice
2 cans of tinned peaches in syrup pulped up
Topped up with OJ
Champagne yeast

SWEET BLACK ANGEL (its actually SOUR Black Angel)
2 litres ocean spray cranberry
2 litres red grape juice
1 jar lidl pitted cherries mushed to a pulp
Topped up with grape juice
Champagne yeast

Sweet black angel is very sour and extremely dry - you can make it less so by using five alive berry burst instead of cranberry as it contains non fermentable sweetners.

Nice arse is slightly cloudy (I dont use finings or anything) and SBA is a beautfully clear cherry ribena colour.

Both make very dry scrumpy type versions of bacardi breezers about 6%, primed and bottled. Great on ice for bbqs - they take about a month to taste just right - I have 6 month old bottles of Nicearse that are just getting better and better.

Stage one: Initial fermentation:

Juice used and Quantity: pomegranate and mixed fruit juice (apple, red grape, white grape and pinaapple)
Yeast Used and Quantity: 1 heaped teaspoon cider yeast
Other Ingredients and Quantity: none
Vessel Used: plastic DJ
Method of adding ingredients into vessel: poured in juice, shake for 3 mins to aerate, add yeast dry, shake for 1 min
Starting Gravity: 1.044
Color/ Cloudiness: purple,
Environment: back room
Temperature left at to ferment: 19 c - 21 c
Time Taken to Ferment: 6 days ( bottled early)

Stage 3: Bottling/Secondary Fermentation:

Finished Gravity: 1.011 ( i am sure this would of dropped to 1.000 like all tc's do, but i bottled early because i was going away. i had to release the pressure in the bottles by opening the lids and letting the pressure out the next day then did them up again. no probs!)
Type/Size of Vessel used: 700ml plastic bottles
Extra ingredients added and quantity (Primers etc): 1 litre pomegranate and mix fruit juice (apple, red grape, white grape and pinaapple)
Temperature: 19 c - 21 c
Time left at initial secondary fermentation temperature: 3 days

Stage 4: Cooling/clearing

Time left before drinking: had the first after only 5 days after bottling ( tasted pretty good) and most about 3 weeks later.
Temperature left at: in the fridge, about 4 c

Stage 5 (My favorite) Drinking:

Color/Cloudiness: as clear as it was when i emptied the juice into the dj
Taste: i was well impressed with this. i have done quite a few tc's and come in a close second place to the original apple tc. please try this!! if you cant get exactly the same juice dont worry. as long as its all or mostly pomegranate im sure it will be fine. enjoy

Have decided these'll be next on my list of obnoxious, dubious, rather dirty brews to try, just one question, how much champagne yeast did you use? I just got 2 x 5 gm sachets on e-bay, do I chuck the whole sachet in, or just a teaspoon?

1sachet per demijohn, just sprinkle it in the top now worries - suggest you save last litre of juice (doesnt matter which) to after racking as the initial fermentation will push fruit up the airlock which could then bung up and pop out under pressure!

SBA is just beautiful to look at in clear bottles - its like art.

Well Bottled my TC a few days ago and the FG was 0.998 so from 1.072 think it'll be a bit on the strong side!

Tried my 10% TC tonight after just a few days in the bottle... and I'll tell you what, not a bad drink at all! Ok Forget cider as it tastes more like an apple and cinemon wine or maybe apple pie wine! Thow a dash of apple juice in it (and it was literally a dash) and it tastes somewhat like vodka and apple juice.

Really Impressed! Going to put another load on this weekend! Can't wait until its fully matured!
Primed it with 1tsp of brown sugar and put it into Grolsh style bottles might try apple juice next time though.
