Gents, I'm looking at doing a wheat beer before long and wanted to run my thoughts pass you for comment etc. So, I'm thinking of;
2 cans wheat extract, say, 3 - 3.2kg
Zest of 1 orange (read somewhere it's quite nice!)
Safale WB-06 yeast (or otherwise depending on comments)
Hallertauer hops 60 min boil to a lowish IBU, say 15 IBU's
Brewlength 19 Ltrs for an OG of c1044
Any thoughts?

I did a trial run of 1 gal. Using the following recipe:
130 diy candied sugar
500g wheat malt extract
22g hops 30 mins (fuggles)
wheat yeast.
primed with 1tsp
Candied sugar is granulated sugar raised to hard crack stage then kept there
for x minutes. Depending upon time adds different hints. I went for a light straw colour. Once at required
colour, then pour into a tray lined with greasproof paper.
I was rather pleased with it I can't remember the sg or fg, but recall it was about 6% abv.
fuggles not cirical, just if aa is higher than fuggles (4.5 ish) then decrease weight, if lower then increase etc.

If you're adding the orange for a Hoegaarden style then use the peel preferably a curacao and some crushed coriander seeds! Think I remember seeing Benson doing an all spray dried wheat beer extract...possibly in brew days. Your recipe looks sound.

ive been trying to come up with a reacipe using corriander seed and orange peal as well. i belive this is a wit beer rather than a wheat beer so i would just be using regular pale malt extract.RichardG wrote:Right, I'm planning to get this on next weekend (somewhat later than planned!). as for the quantities from looking at a couple of recipes i have written down 40g orange peal and 15g crushed corriander.although i think i read that if you are using curacao you should use a bit less as its more bitter.this is for a 23 litre brew though not 19 litres.
im not 100% sure on this and could well be wrong so best to wait for someone more experienced. so please correct me if im wrong, just thought i add what ive seen.

They use coriander and orange peel.

Coriander can be overpowering so for a mild flavour - use 4-8g.
For a stronger flavour where it is a dominant characteristic, use 28-56g. Again, this is for 19 litres.
