Planning to have another go at a Belfast Ale Clone. My first attempt turned out very tasty, if somewhat different from the original so I've modified the recipe based on what I can remember of the last one. I wanted to increase the maltiness - there's quite a strong dark malt flavour from Belfast Ale which suggests I need a lot more chocolate malt than before but its colour would be much darker if I used a lot of chocolate malt so I've decided to use pale chocolate malt instead. Also, I don't think the Safale-04 was right the last time either - it needs to be cleaner and drier so I narrowed it down to Nottingham or US-05. I think I'll go with the US-05 as I don't want any esters at all in the taste.
Anyway, here's what I've come up with - it's almost like a lighter version of a brown porter. Hope to brew it sometime over the next week.

Never tasted a Belfast Ale, but I do like a nice malty beer. Guess it's the aroma that gets me. Let me know how this turns out as I may add this to my list of AG brews which seems to get longer by the day...lol
