Have just done a Geordie Yorkshire Bitter with Fuggles and spray malt. It was in the FV for 15 days and down to 1.010 for the last 5/6 days, clear and smelt good. However there were still signs of activity ie lots of small bubbles on top. When bottling with 1/2 teaspoon of brewer's sugar it was very lively and foaming up. When I tried without the sugar got no reaction? Weird, this has never happened before

What I think has happened is that during the fermentation process some of the CO2 produced by the yeast actually dissolves in the wort and comes out of solution over a period of time (which is why bubbles are not a good indicator of FG being reached). When you add particulate solids this encourages the formation of CO2 bubbles and brewers sugar being very fine grained will do this to a much greater extent that the coarser household sugar (weight for weight the are more individual grains in brewers sugar than household sugar). The easy way to get round this is to dissolve the sugar in water first. Then you won't get any fizzing.

Thanks for the info will remember that. Was talking to a fellow craft brewer today and he said it is a peculiarity of Premium Gold Yeast evidently.

I've had a similar experience, with my first kit (basic Yougs Lager) and my recently bottled TC I had no reaction, but with all my other kits when I added the sugar to the bottles I've had a "$hit, get the lids on quick!" moment as it started to foam up uncontrolably...

just put some yorkshire geordie bitter with bke, on at my mates house had some sazz hops so made a couple of hop teas smelled real good took an og reading and it was 1072!!! this is off the scale if it goes down to 1010 its gunna blow our noggins off

i primed some ditches stout with dsm in the bottles and they were bubbling out the top before the bottles were full.

Well I've started drinking mine now and it is a case of third time lucky. This one is as clear as the proverbial bell without any of the unusual kit type smell and tastes really nice
