to be honest i havent even started AG brewing yet but will hopefuly be doing so soon and would love to get a recipe for this or something similar to add to the others i have been collecting. ive just finished a bottle of this and loved it. it was my first taste of a schwarzbier (black lager) and it went down very well indeed. very smooth and well balanced.if anyone has a recipe for this it would be great.

kostritzer recipe please
Re: kostritzer recipe please
This might be similar enough, but you may need to scale the quantities down a bit.
The one I did:
4.0kg Munich malt
100g chocolate malt
500g Carapils
250g amber malt
40g homegrown 2006 Hallertau hops for bittering
26g homegrown 2006 Hallertau hops for aroma (last 15 mins)
Mash schedule:
½ hour @ 50 ̊C
1 hour @ 66 ÌŠC
Boil 90 minutes including for the last 15 minutes the aroma hops and the pre-soaked Irish Moss.
Yeast was 2 litres of S-33 sludge from the bottom of the Munich Dunkel I'd done the week before.
Started 5th Nov 2008, ready to drink mid-February 2009 after serious lagering and bottle-conditioning.
This was a very nice dark lager, but not as black as I would have liked. More roast barley perhaps, though I don't like it too roasty like some stouts.

Re: kostritzer recipe please
thanks for the recipes. the one in the link calls for 50 lbs pilsner malt. isnt that way too much even for 31 litres?!
if i was to follow your recipe how could i go about making it black. i also did like the slight roasted flavour in the one i had but would not want any more than a hint. could i use dark munich malt or would this create a different flavour? or could i mix dark munich malt with pilsner malt?

The Weyermann recipe page does say:
I suspect that many brewers of black beers use Sinamar, which is officially a dark malt extract so OK under the Reinheitsgebot, but practically speaking is a food colouring. You can probably order it in this country...
The wholesaler is Charles Faram and Co Ltd.
Not sure whose gallons... I thought a barrel was 36 gallons. Other recipes on their site are for even larger quantities.Weyermann wrote:Makes 1 bbl. (31 gallons)
