Cooper's Dark Ale - experience so far

So, with my first ever brew in the pressure barrel and being drunk, I came to the sudden, shocking realisation: "what am I going to drink when this is finished?" thought I. Clearly, I needed to rectify the situation, and put another brew on right away.

Out I pop to my friendly LHBS, the quest being to find a can of Cooper's Stout and a kilo of medium spray malt, to make my second brew the eversofamous "Ditch's Stout".

Imagine my disappointment when, horror of horrors, the LHBS didn't have any Cooper's Stout in stock! This situation needed to be rectified, and fast, but such was my conviction that I clearly had to brew something right this minute, I ended up walking out of the shop with a can of Cooper's Dark and 500g of dark spray malt.

Rushing back home to check the sanity of my purchase against other people's experiences on JBK, and losing both the can and the packet of malt under the front seat of the car on the way, I realise that there's not a huge amount on the forum already specific to this kit.

Once dug from the depths of the car, along with three pens, one pound sixteen in loose change and a fossilised apple core, I made up the kit as best I know how - 500g dark spray malt, 500g glucose, bunged in the FV and topped up to 20 litres in anticipation of the renowned Cooper's yeast monster. Which made itself known nevertheless within 24 hours and resulted in an airing cupboard full of beer and a somewhat stern disapproval from the missus.

Fortunately the monster is as fast as it is angry; once receded and within 48 hours from pitching the SG had reduced from 1041 to 1014.

After paying my penance of laundering the mopping-up-towels and scrubbing the carpet, I was finally allowed back in the airing cupboard. Bottled half, with the remainder in the pressure barrel one week from pitching, with 80g total glucose for priming.

Not-so-swiftly, then, to the point of this post: it's now been five days from bottling/moving to secondary. I couldn't resist having a quick tastette earlier, and, egads, it ain't half bad already!

There's a fruity aroma, something like a cross between strawberries and slightly burnt apple crumble. To taste: initial bitterness, followed by a rounded sweetness that reminds me a bit of Hook Norton Old Hooky. Now I'm no Jilly Goolden so I may be talking utter rubbish but that's my two penn'oth at the moment.

It's still mighty cloudy but is already a great pint. Much better than my first brew. Maybe I shall have to drink this whilst I wait for the first one to get better...

... which brings me back to the same question that started this whole charade: "if I drink these together, what am I going to drink when they're finished?".

Fortunately the magic of planning has meant that I've ordered in a can of Cooper's Stout and the requisite medium spray malt for my next brew. Is there a way I can shrinkwrap the airing cupboard to make cleanup easier? :D

All in all, a great brew so far. Let's see what happens as it matures.

Regards ye First question? I think ye've answered That already!

As to the second? I think it's about high time one of these guys came up with just the right car tyre, to fit a FV into. Then the best brand of silicone to weld a sheet of perspex sheeting to the bottom of it .....

Personally? I just have an old fashioned, concrete floor. No wife. And a 'TFWI!' sort of attitude! :mrgreen:

Expense claim: one can Cooper's Stout, 1 kilo spray malt. Yes, Mr Speaker, this claim is an essential expense in the conducting of my duty as an MP.
Gotta be able to get away with that one.

Well I share the TFWI attitude - surely the pursuit of beer's more important than a cupboard that doesn't get used anyway, right? :lol:
Wonder if I can convince her to give up the bath for my next batch. Clean up'd be easier and a darn sight more convenient. At the very least, at the prospect of losing the bath I'm sure she'll be happy to let the airing cupboard go.... :wink:

I just did a Cooper's Dark as my first ever kit, with a kilo of BKE and half a kilo of dark spraymalt, and mine went nuclear too. Luckily my fermenter is in the cellar. :lol:

should be pretty drinkable though - it smells great and has gone down from 1.045 to 1.009 in five days. bottling soon fingers crossed. 8)

I just LOVE Coopers Dark Ale

Just finished one and giving my liver a rest while the next one is brewing.

I didn't get a monster foamy head though - not worried as the last one didn't either and was fine

My second brew, just a few weeks ago, was a coopers dark ale with 1kg light spray malt (the shop just gave me light, not sure what's best), and I also had an explosive first 36 hours fermentation. After discovering it I just stuck the ferm bin into a plastic storage box, which then caught all the spills. It was a quick ferment too, 1042 to 1010 in 2 days, and stayed there, bottled after a week. The box doubles up as bottle storage when conditioning too, just in case there's a bottle explosion waiting to happen.

It's now 10 days since bottling and it tasted ok last night, I'm suspicious that I didn't mix the priming sugar in enough, because this was the 2nd bottle I've tried and it wasn't as carbonated as the first, but tasted canny. Enjoy!

I sit my FV inside a garden trug! Its cheap quick and simple and keeps people happy :lol:

I have to say when I were doing kits I think the Coopers dark Ale was my favourite, lovely and malty and I adapted it a couple of times, one for a winter warmer and another to be more hoppy, both were delicious.

Glad to hear all the good things about the Dark Ale in the topic.

Looks like I might be on to a good one! I'm tempted just to get on with drinking it (been in secondary for 1 week so far), but don't want to miss out on it maturing into something *really* good.

That said, drink quickly, and put some more on seems to be the name of the game for me - and it means I can try out the legendary Ditch's Stout quicker too.

Time to get drinking.....

hi all the dark ale is good, just got another stout to knock up with dark spray malt this time gunna leave it to mature for a good while this time . it will give me a chance to drink my coopers ozzy pale ale :beer:

I just have to post this answer (my first on this site).

I have done a few Coopers kits but I am currently drinking the Coopers Stout from my Corni keg and it is easily the best by far.
It was in FV for 3 weeks then secondry for 1.5 weeks then force carbonated for 1 week.
Approx half left but it is going fast and just keeps getting better with time!!!

For info I added 1Kg Muntons beer enhancer and 100g Dextrose

Highly recommended. :wink:
