I've done this with my current brew, 150gms in the last 15mins. Had good results too, should be bottling in a week or so.J_P wrote: I'm planning on adding a few hundred grams of fresh elderflowers to a brew for my next beer club (brewing group) meeting, if it smells half as good as the "champagne" that's bubbling beside me then it should be a refreshing cracker.

I see you were interested in Hugh Fearnley whittingstall's recipe for ale bittered with Spruce, and others are talking about Heather ale. You should check out Hugh's pre-river cottage series, 'A Cook on The Wild Side'. In it he travels to the scottish highlands and picks heather with a load of brewery workers before making his own 5 gallon batch - it has a recipe in I could probably dig it out if you're interested? I remember it being pretty primative though!

I don't really care for Fraoch at all, the same brewery do a spruce beer which is actually pretty nice, though. They also do an IPA for Tesco, another good beer.
