I might still have a few litres somewhere. I had a couple of bottles of it in the fridge but those went earlier this week. Very nice they were too. I actually served one clear, ie without swirling the yeast up. Made a very passable Kristallweizen although I stopped short of putting lemon in it.

came out at 78% Efficiency The SG 1.071 at 26c For 23L 8)
how do i work out the Alcohol content and when best to keg it would you say :roll:

I still have all the ingredients ready and waiting to go. If I wasn't so slow at the DIY I would be enjoying a pint or two of Hefe at Christmas. :cry:

Thinking of doing a doing a mini mash a la Darb's website. This will be my first all grain brew, so I have decided to only make 1 gallon. This way if I kuff up then I wont be too bothered. Also, I haven't got enough money to buy all of the equipment yet. Thinking of making a Hoegaarden clone from the Camra book.

Not sure which yeast to use. Don't see any point in buying a liquid yeast just for this, although could save most of starter in fridge for a full brew in near future. Which are the best yeasts to use?

Equipment wise, I'm going to use a bucket in bucket system, so I will need a tap. Also need a thermometer. Got a big SS pan in the kitchen. Any other equipment that I am missing?

Going to buy a 5l water container from supermarket to brew in. Would I be better off using this water or tap water for the brew. I know that there is a lot of tish in the water around here at the moment. What would need to be done to mineral water for it to be right?

Sorry for such a long post and I hope it is all relevant to this thread.

Brewed it yesterday evening. Didn't quite all go to plan. Mash temp was all over place for first half hour. Forgot to add spices :oops: Also, My efficiency was pretty poor. I ended up with an SG of 1034 instead of 1051. It tastes and smells right but just hasnt got the correct amount of sugars extracted. I have put this down to my temperature control being poor.

Should I add a small amount of brewing sugar to up the gravity? How much will not affect the taste?

Although it didn't all go to plan, I shall regard it as an important lesson. Thats why I only brewed 1 gallon.

Decided to just leave as is. So long as it tastes good I dont care and the smell is great already.

I have been looking forward to trying hefe, following this thread, and did so last weekend.

I just tried it, a couple of days into fermentation to see how it was going and it tasted fantastic. This is my 3rd ever 100% grain and I was amazed how good it tasted. Even had an OG of 1058 (now down to 1026) which will presumably making it a reasonable strength - the highest I have managed so far.

Well chuffed. Thought I'd share my enthusiasm (not that this forum is lacking any).

Nice one Pete. I hope it realises its potential.

I just picked up 6kg of wheat malt so I can brew some more although I still have a gallon or so left from my last batch.

This is the only recipe I have on tap almost all the time. I just love it. I'm also really glad to see so many of you guys have fallen for it too.

It's so simple to make and with no need for it to clear it's perfect for those of us with zero patience. That said, when it does clear it's also a great beer!

It will but the style dictates that it's served cloudy - the yeast *is* the flavour (mostly!)
