Thoughts on this one please

Sad as it may seem, After the summer holidays are over Norway gets ready for the Winter. Over here we have special beers for christmas so i thought i might try and brew one from scratch.

I am really after something hoppy, yet with a bit of a kick.

so...

25 l batch

11.5 lbs Pale malt ( not sure which though)
1lb crystal
1/2 lb chocolate

2oz wilamette for 60
1 oz wilamette for 10
irish moss for 15

acording to an online calculator this gives me about 1062 OG IBU of 38

I would add at least another ounce of hops at the end of the boil while cooling if you want some decent impression of hops.

Whatever you feel like, do you like Williamette? They are a fairly low-key hop, although they do have a good flavour.

If you are looking for a real hoppy kick, you could perhaps go for a Cascade, Centennial or Amarillo ?

More hops, around 50 for that gravity. Yeast selection is also important. I'd go with UK-05.

thanks for the help.

I am a little concious of having ittoo hoppy.

A firend recently made a great IPA but one keg was dry hopped with east kent and for me it was too much.

so ideally something where you taste the hops, without them being overpowering if you undrestand what i mean.
I am new to the AG game and know little to nothing about different hop types.
