High Temp ???

Post by THE TACKER » Sun Jun 28, 2009 6:08 pm

Been checking my Wherry which I got going yesterday and due to the warm weather I'm having trouble with the temperature .The Temp range quoted(18-20 C)on the box.I've got it in the coolest room, fan going and can't do much better than 25-6C. will this kill the yeast?

Hi Tacker
I have a few brews on at the moment, One of them also is a Wherry. Thats a bit warm but I think you'll be fine. It'll ferment out quicker.

I soak a couple of tea towels in cold water and drape them over the fv in this weather. I should get a couple ready for the daytime cos it could get to 30 or higher this week. [-o<

I remember reading somewhere, that if you brew too high "harsh alcohol flavours may develop", so bear that in mind, I have a hunch it'll be fine though.

25-26C is too warm. It won't actually kill the yeast but, depending on the yeast strain, may produce off flavours.
Best wishes

I too am at the moment worrying about 'cooking' my beer - but there's not much you can do.

I have heard previously that if you do slightly cook the batch if you leave the beer for an extended maturation period then you may be able to reduce any harsh flavours.

I just did a lager kit and kept it in a bath of cold water. Freeze a couple of 2 liter bottles of water and when you chuck them in, put 2 more in the freezer and keep rotating. Just take it out when anyone wants a bath but for the warmest part of the day i was getting mine down around 18 degrees and its not as much of a pain in the bum as it sounds.... keeps you brewing through summer!

I'm too hot also, so have bought a digi thermostat and will run it through my chiller line.

Even in the garage my FVs are at 24-27. DOH

Just put a Wherry on there today. Its sitting in a press where the temperature is at a constant 23 degrees. The actually fermenter is reading a couple of degrees higher, maybe 25.
Should I drape a few wet towels around the fermenter to bring down the temp a bit and reduce the chance of harsh alcohol flavours/funky yeast esters.
Or should I just leave it be?

Slayer, I got room in my naturally perfect temp understairs cupboard. Bring all your brews over & leave 'em with me! It's my pleasure.
