Brewing in hot weather?!

Post by mercilessrich » Mon Jul 06, 2009 3:51 pm

Its hot. Well, fairly.

My flat is very warm and daytime temperatures rarely fall below 24 at the moment. Does anyone have any suggestions for brewing in this weather? Its too hot for lager, can you get away with an ale or am I asking for esters and nasty twangs in my brew if fermentation proceeds too quickly?

Cheers!

Rich

I tend to stop brewing during the summer months due to the higher temps. You can do as Trunky suggests and cover the fv in a wet towel but I just find it a bit of PITA. Some yeast cope better with higher temps so you can get away with it.

Fortunately, I have a cellar and I don't have to stop :D :D :D

It might be worth a trial run with water in the FV to save wasting beer. bear in mind that the activities of the yeast will raise the temp too.

Coopers imply that their yeast can take a higher temperature - not tried it.
Coopers yeast is very tolerant to high temperatures, I emailed them the other day to ask if I could purchase some packets of their yeast but they told me they don't sell it seperately.

Australia's never exactly evoked impressions of a freezing hell though, has it? Shame they won't sell it separately. Golden goose, I guess? Ye'll just have to keep buying the whole kits.

For my part? Coopers all the way, naturally. And, summer? Heh! This cottage has eighteen inch thick, stone walls. It's probably about as near to an above ground cellar as it gets! :D

My house is roasting at the moment, I have brewed coopers kits at nearly 30 degrees and I have never had a bad one yet :D

if it becomes a problem again, do what i do. make a well insulated box out of polystyrene foam. put a couple of 2liter plastic bottles of water in the freezer. put one ice block in the cool box every morning and refreeze the old one. i can maintain 20 degrees in 30 deg air temp.
