Raspberry and honey cider

Made up my Summer batch of Rasp and honey cider today

22ltrs AJ
1 kg Raspberry
1 kg honey

OG of apple juice 1.046
Rasps and honey added O.G 1.058

1 sachet of cider yeast added about 2 hours ago and its away already. Love making this stuff its so easy! Assuming the yeast performs as usual it should end up about 7.5%! Should be nice for late Autum.

Does it taste of raspberry and honey, or do the sugars just ferment and leave no flavour/aroma ? Ive been looking for a good way to get the fruit flavour into cider and beer.

You get the raspberry flavour coming through, subtle but there. The honey i can't say so much as the last batch with honey was this time last year, maybe memory says there was a bit?. To prep i boil 4 ltrs of AJ throw in the rasps, boil all that for 20 mins. Sterilise my FV beofre i start any of this. open the honey jars and pour straight into fv, boil kettle and use boiled water to swirl out the honey jars, again straight into the FV. Use sterilised 2 ltr jug to decant AJ/rasp mix from pan into FV. Use sterilised scissors to cut open the rest of the AJ cartons and pour into FV. Sterilised scissors to open packet of Youngs cider yeast, pitch close FV. Activity was seen in 2 hours at the airlock. More rasps this year than last year

I made 5 gallons of TC with honey as main sugar addition - don't taste any honey in the final cider whatsoever, though it did alter the colour from my normal TC's

Bottled today at 1.000, tastes sweeter than the last batch i made which was apple.pear and vanilla pod. I have no idea how both can be reading 1.000 and the raspberry and honey one tastes sweeter(still dry as hell though). Anyway its carbonating for the next month or so in bottles so we will see. The colour is great, just what i was looking for.
