Hi All,
My next brew is intended to be a Christmas winter warmer from 2x Woodforde's Headcracker... I intend to make both kits together, short, to 5 gallons. I think a Champagne wine yeast would be best or this, discarding the provided yeast... Any advice? I'm looking for a 10% sipping ale.

Well... 7 days in and it's still bubbling away merrily... SG still way up at 1028!

I'd added both packs of the provided yeast on this one at 20 litres and once the initial, lid-lifting fermentation was over I added another 3 litres of water with nutrient... I'm thinking of adding an activated champagne yeast if it slows too much before 1.020.
One question: Is there any need to prime the keg (S30 valve) if I rack it at, say 1.018, if there is still some appreciable fermentation? Seems pointless on a mental brew like this! I know I'm taking the brew off the trub but surely there's enough yeast in suspension to complete fermentation and condition the beer over the following weeks... I'm not looking to start sipping it until the autumn.
