Ah ..... No. My local town's Mohill. As I don't drive a motor, Carrick's a 'Long way' from me.

So my Ditches stout has be in bottles for about 8 weeks now. I've been trying a bottle every odd week and I found it an ok stout, nice body, not a thin stout, but quite a burnt Licourish flavour to it, which I wasnt mad on........ BUT
I just popped a bottle there and I must say its really coming along nicely. The Licourish flavour has mellowed alot revealing a nice roasty flavour underneath with a slight hint of choc in there too.

Interesting, Slayerking. See, I drink mine from a Keg. I never bottle beer. I also tend to get through it virginally young

always made it in kegs from the start and loved it, just recently bottled thru lack of an empty keg and not enjoyed as much


by the way thanks ditch for introducing me to one of the best stouts ive ever tasted

I'm finally having a crack at this one, hoping its as good as advertised lol. I suspect the trick is keeping most of it in the FV... I have teatowels at the ready (having already been caught out by the Coopers yeast monster once)

dunc i always make it up to 4.5 gallon then top up to 5 when it calms down, first time i did it it went mental and came out the airlock

I did, and the bugger's still trying to climb out! I thought the Dark Ale was lively but this is scary. Froth all over the bench.

as an update i had a bottle last night and it is maturing nicely
still prefer the barrel version tho.

I did bottle it at the end of May and its great - took a while to fully carbonate though, so I might prime with 100g sugar instead of 85g next time. cracking smooth pint now though.

just ordered some stuff from leyland and got a kit, have got the option of glucose/dark beer kit enhancer/medium spray malt any advice?

I did it with 1kg beer kit enhancer and 500g dark spray malt. However you go I suggest using at least some proportion of malt with it - it turned out really well.

taking the thread back off topic but ive just tried a bottle of the dark ale and by golly we have another belter from coopers

its only actually 2 weeks in the bottle and i reckon its gonna become a staple brew in the house.
serious question brewers, do coopers get much wrong as far as kits are concerned
