Any ideas for these two ?

They're normally quite forthcoming on the bottle. I know Admiral is 100% munich malt, though they call it 'cornish gold'.

You have to make an educated guess and that's half the fun

Generally the hops are listed in the order they are used, (if you look at 'Smugglers' they do throw a spanner in the works regarding the hops) They will substitute hops due to cost, availability etc anyway.
In the case of 'Admirals' Styrian for bittering and Cascade for aroma.
'Proper Job' would more than likely be the first two for bittering and Chinook for aroma as it would be unusual for a brewery to use 2 aroma hops. That's just my guess though

I think that,seen the high AA in Chinook, that would be the natural choice for bittering in Proper Job. I read somewhere that Chinook added late in the boil adds a herbal-smokey flavour/aroma, which I cannot find in Proper Job, while added early in the boil it should be just grapefruit. Anyway I am brewing this one today:
23L OG 1.050 IBU 40 Fuellers Yeast
not sure how close it will be to the real thing, since I replaced Willamette (which I never liked in my homebrews) with Goldings, but I am quite sure it will be nice.

I moved down here to Cornwall about 6 years ago, the St Austell beer was awful, badly kept in most pubs, a sticky sweet brew that haunted you the next day. In the last twpo or three years there seems to have been a transformation. I had a bottle each of the 'Proper Job' and 'Admirals Ale'.....they were outstanding drinks. They're also bottle conditioned so I intend to try capturing the yeast. I think a new head brewer took over up at St Austell, since then things have improved hugely in both the pubs and the ales in general. There seems to be alot more pride in their product all round. I'm back on the tribute now!

I had a pint of Tribute in a pub at Burnham on Sea last month and it was THE worst pint of any ale ive had for ages , but everytime ive been to St Ives (The lifeboat inn)it's the best ive ever had. Maybe like me it doesn't like leaving Cornwall cos every time the train crosses the bridge I go off a bit too.Been thinking about moving down that way for a while now myself whats St Austell like then as I mainly go to Marazion or Penzance.

St Austell has been left to rot for years whilst planners and council know-alls argue the toss over what to do with it. They started demolishing the 60s concrete bits without having a plan of what to do with it. They are coming out of the darkness now though. It will be quite good when finished, theres a new cinema and some swanky new shops (for St Austell standards). Its OK...but then I have lived in Harlow and Thornaby on Tees before. It will be good in a few years so I'd say now would be the time to move. Thers lots of pretty places around St Austell, Charlestown, Mevagissey, Fowey and great shopping in the lovely city of Truro. Thers even a homebrew shop in the hardware store there, they sell grains, kits and equipment. Not a massive choice but a friendly shop staffed mostly by older cheery types.
On balance I'd say yes to Snozzle, c'mon down, we'll have a pint!
ps no offence to Harlow or Teesside, I loved my time in both.
