Here's a right good one that three of us did last year. None of the candle smell that I hate in a Christmas brew. Pale extract was added late in the boil to boost the gravity as my mash tun wasn't big enough to handle all the grain for a 10 gallon batch. Note: this batch was a 10 gallon batch split among three people and fermented three different ways. The guy who followed the directions below had by far the best brew. I let mine just sit in the basement and it turned out the least desirable of the three. Still great, just not as good as it could have been.

i wont be able to brew that exact recipe but i might use it as something to base a new recipe on, using what hops ive got to hand and without the extract,

Maybe ramp this up to 6 kilo for the extra alcohol, or even simplar reduce the brew length a little to say 15 l and not 25

Hate xmass bah humbug but love a good winter warmer/xmas brew recent years the pubs seem to make a standard beer give it a silly name and think thats good enough bah!
I made this recipe last year found on the net link to thread it was great, I've then tweaked and done a strong not xmas ale version (missed the spies out) then a tweaked slightly weaker left overs, swapped some of the masses of dark malt extract for light. They are by far my best sellers, well they would be if I charged everyone loves it even the girls ;o)
So would recomend highly
