Actually, 11 days is long enough on the yeast, I should have clarified that I thought Bottling it straight away was wrong, not getting it off the yeast though I still leave mine for 2 weeks. If you are kegging then you can do so after 11 days but if you are bottling it you should transfer to a secondary for a week. I used to bottle straight away but I have noticed a real difference in my bottled ales since I started transferring to secondary, they taste much more like my kegged ales now.

I've noticed that I sometime get a bit too much sediment into the bottles (bottled via bottling bucket), though this is probably due to me putting a tap too low on a particular FV bucket. I suppose at some point I'll try the Intermediate secondary before bottling.

I guess you're always going to get a layer of yeast in the bottom of a bottle. There has to be yeast present to condition the beer. Careful pouring will ensure a bright beer.

I may try MMs advice and secondary for a week before bottling as some of my bottled beers can taste a bit too yeasty.
