adm..i think we might just have a winner! really like those names, im starting see a theme going with my beers, i did a porter called 'fisty cuffs' and a bitter called 'on the cobbles'

yeah the spices went in with the late hops at 15 minutes, its the first time iv used suger in a AG brew, if you leave it out just add more pal malt to up the gravity,yours will have slightly more body and higher FG...i think :lol:

its fermenting away nicley,its got a nice big yeasy head on it, i checked the gravity on monday and was at 1.028, tasted amazing, still really sweet though,

just boiled up a teaspoon of powdered Ginger in 250 mls of water, going let it cool to 20'c and thats going into the fementer,

so far so good!

ive tested the gravity, it looks though its fermented out to 1.016, although im going to leave it untill monday to check again, if its still the same ill bottle it up.

i was really hopeing it would get down to 1.010 for abit more ABV

so currently OG 1.066 FG 1.016 66- 16 = 50 x 0.129 = 6.45

6.5 % ABV thats not too bad i suppose.

all bottled up, ready for the cellar in a weeks time,

after closer inspection of the FG it was more 15 , so the ABV is 6.6 %

il have to hide it out of the way in the cellar so i dont end up drinking it befor christmas! :mrgreen:

Thats strong enough really. I mean a little alcoholic after burn is good, but too much and you don't remember christmas.:)

keV I would be really interested to know what any sample taste you had where like, I like to have one every week or so till it's ready just so see what thar aging is doi g for me.

aup pal, the only tasteing ive done is from the hydo jar and when i bottled it up, ive not opened my bottles as of yet, im going to give it a couple of weeks befor i start opening them, give it some chance of making it to xmas :lol:

it taste great though, full bodied, dark, smooth, the cinnomon its the most in your face spice,very christmasy, the ginger didnt seem to have much affect,ill be able to discibe it better when i have a proper pint, really happy with so far, really looking forward to xmas now! :mrgreen:

If I was going to make this with a kit, when would add the spices?

And what type of kit would you recommend to go well with the spices? A nutty brown ale?

cheers duck, id say if you wanted to add spices to a kit brew, knock it up as usual then once fementation has died down after a couple of days boil the spices in around a pint of water say,for around 15 minutes, cool then and to the fermenter,

ive not done a massive amount of kits but id say Norfolk NOG might be a place to start, you might get better recommendations from the kit brewing section if you post something up there.

There is a John Bull premium Porter kit which I have made in the past (was very nice) I reacon that wouldnt be a bad one to try spicing it up.
The other option is to go the extract route, I use a 20 litre pot and boil up about half volume and water down, the chances of being able to repeat very accuratly are impossible but I produce a great tasting bevy (IMHO) this is the recipe I followed last year click here and have just got this years version on the same recipe but lowered the amount of honey 450g and added a little black treacle on target for something like 8% a 1 pint at a time drink.
It really isnt much harder than kits and well worth the extra effort.

Kev, ive just orrderred my supplies for this great recipe of Paul @ BB:-


6000 gms pale malt
200 gms cyrystal malt
300 gms choclate malt
110 gms torrified wheat

64gms Northdaown hops
50 Boadicea hops (late hops)
last 15 minutes added
4 , 3inch cinnoman sticks
1 tsp nutmeg
1/2 tsp cloves
zest of 4 oranges

do you think in hindsite 4x3" cinamon stick is the perfect amount? Also i like the idea of a little ginger kick and id read somewhere one guy grated 4oz of the stuff (skin on best too id read). What would you reccommend so as not to overpowering in the ginger department. Also do i add whole cloves or should i crack/crush them?
