Did I pitch too warm?

Oh dear...

I thought I was being smart by using my AG rig to do a kit that I had lying around (Wherry). Anyway, I treated the liquor as per a bitter and boiled for a few minutes. I then used my mash tun as a mixing vessel for the kit cans (added 23l of boiled water).

I waited for the hot break to settle and piped the wort into my FV. I then waited half of the day for the wort to cool (I couldnt use my cooling coil).

Eventually I rehydrated some S04 and aerated the wort for 20 minutes.

I pitched at 34 degrees as I got bored of waiting.

Will the beer be spoiled do you think as its over 10 degrees higher than it should be(It is in my kitchen, and dropping in temperature naturally)?

I am hoping that by the time the yeast kicks in, it will be down to 21ish....

34 degrees is very warm . . . the yeast *should* survive that temperature as rehydrating temperature is only about 4 degrees cooler. I'd do everything you can to cool that fermenter down as quickly as possible (wrap it in a wet towel?). You may get away with it if you can get the temperature down quickly enough.

Your biggest problem is likely to be that the yeast would have started reproducing and adapting in that warm environment, so won't be giving the best flavour profile and probably won't perform ideally when it does get down to normal fermentation temperatures.

Try and cool it ASAP - touchwood it'll be OK. :)

No worries. :) At the end of the day, though, you've moved to AG so now you know what you can really make, you may find yourself using the wherry to make Welsh rarebit. :lol:

I had to go to the inlaws on Saturday so shelved my brewday. I had the kit, so thought I would squeeze it in today.

I did see a post where Chris-x1 suggested rehydrating yeast between 25-35 degrees (I cant find it now thought)

I'm suprised a guy used to doing AG brews asks a question about pitching yeast! :-k To be honest if its too warm at time of pitching then re-pitch later :-k

I never sanitise my mash tun as the wort will be boiled................as you used it as a mixing vessel, I hope you remembered :?

I only have a couple of brews under my belt (3) so still learning!

Yes I did sanitise, I'm the same as you, never do anything pre boil.....but remembered for the kit..

Just taken gravity reading and I think it has stuck at 1020.... Everyone was right about it working too fast...

Should I pitch some more S04?
