Hi.

I am looking for a nice easy drinking beer which will not take ones head off over the festive season.

Based on one of the recipies from Norms posts i have the following idea.

3290 Pale
170 Crystal
120 Torri or wheat malt.

In addition i am thinking of 40 g challenger for 90 then another 20 challenger at around 15

I have a thing for bobek( stryians) at the moment though so wonder if putting say 15 grams of these in for the last 10 would be ok,

Is there anywhere on the forums where hop combinations are shown? I'd hate to mess up ( again) through wrong hop combination.

That looks nice, but how about a few grams (say 10g) of black patent malt for an enhanced red colour

Amber will probably also give you some extra sweetness and body, if that's what you're looking for -- a little black malt just gives you some colour without affecting the flavour or mouthfeel very much.

Depends just how hoppy you want it to be, I suppose. If you really like the Bobek, why not throw an ounce or so in at flame-out, for a punch of aroma without any extra bitterness?

I recently made a hoppy IPA-ish ale (turned out 4.8% instead of 5.8%, cause I over-sparged :cry: ) with US-05. No problem with the yeast at all. It will be ready to drink in 3-4 weeks, plenty of time to condition for Xmas

COOL,

THEN HOPEFULLY I'LL GET THIS DONE IN THE NEXT FEW WEEKS AND PUT IT TO BED. IF NOR CHRISTMAS, THEN A JANUARY SLURP. i'LL GO FIND SOME s 05 FOR A CHANGE!

Might scale down the grain bill though for a small batch. Or i'll no sparge it in order to get a maltier wort to go with the hops.

You could also consider using a pound or two of Aromatic malt. Nice for maltiness...

I know but i only just managed the last brewday whilst the mrs was at work. I promised her that i would not do another before christmas but i need my hit!!!

Its a learning curve for me, so i guess i have to try and fail.

Well, I've never tried a no-sparge, I'm too mean :evil: (as it'll require a rather larger grain bill)

It's something I've considered for making a barley wine. I was thinking of doing a big batch of it but maybe 2 gallons of no-sparge barley wine then use the remaining runnings for an ale.....

a small change in the grain bill will give me 5,5% at 50 % efficiency. I would take a gravity at the first runnings then could always sparge if it was way too low. thats the idea anyway.

to be honet the only thing that is reatiely cheap here is grain, everything else i get from the uk.

Shame postage is so damn high from the UK to here else paul would have a lot more business.

Grain is ordered, just need to get rid of swmbo at some stage for a few hours .... but not til after the FV is empty.

From my limited experience, Safale US-05 clears well if your water is treated well but hangs around a bit if you haven't bothered :)

No problem; by "over-sparged" I mean I sparged too much wort out of the mash. I was 3 or 4 litres over after the boil, so the gravity was diluted.
