I posted this in the hops section earlier but it may be more at home here.
Anybody have any idea's?
I have an extra packet of Centennial and Nelson Savin, arrived late were supposed to be posted out on the 21st of september so they have been out of the freezer a while. I was thinking a high-ish gravity IPA using both of these and lager malt.
Just wonderd if anybody has any incite on how these two would go together?

I've not tried Centennial before, but all I can read on it says it's very well balanced, and also that some people call it a "super cascade" and it's good for all US style ales.
Given that the Nelsons are extremely distinctive, I'd imagine the two would go together well. I would think the Centenials wouldn't fight the Nelsons too much, and that the beer would come out tasting more towards the Nelson Sauvin depending on your hop schedule.

I was considering either using a "normal" hop schedule or one of those americanised ones where I add hops every 5 mins from 30 mins in.
Was thinking an OG of around 1075 and 90IBUs. Then I have 100g each of the NS and Centenial to play with. Ive actually 200g of each but I am going to do some single hopped pale ales with the other 100g.
So either
35 grams at 15mins
35 grams at 0 mins
30 grams dry hopped
10 grams at 30mins
10 grams at 25mins
10 grams at 20mins
10 grams at 15mins
10grams at 10mins
10 grams at 5 mins
20 grams at 0 mins
20 grams Dry Hopped

Personally, I'd go with the first one (but with a 90 min main bittering addition - I presume you mean that anyway). I quite like to brew New World type beers where half the IBU comes from the 90 minute bittering addition, and the rest from the 15 minute flavour addition. Plus a big shot of hops for the aroma at the end. It uses lots of hops, but what the hell, eh?
I've never tried to add hops in short time increments like the second approach, I don't know why though - it just seems to make life more difficult and I like things easy. It would be interesting to do both side by side and compare results one day.

This is what I am thinking. I need more fermenters and bottles, I have about 6 different beers I want to brew. How does the recpie look? I am considering switching the caramalt for crystal.

Sounds good I would throw in some dry hops though. Maybe half those 0min additions could be dry hops.
One thing I loved about the Brewdog Chaos Theory beer was that big NS dry hop aroma.

Are you quite sure about the final IBU level? I think it will end up a bit closer to 81 IBU

Sorry half those zero min additions are dry hopping. Thats why there is two lots
.
I will switch the caramalt for 200g of crystal.
Should give me an OG of 1073, and i'll bump up the bravo at the beginning to 25g that will have me at 91IBUs.
That should be the 3rd brew down the line, a porter, Simcoe pale and then this.

I would use Golden Promise malt if you can get your hands on some or at least dont use all lager malt, maybe cut it by half with some MO.
Any reason why you haven't considered applying some of those hops towards a "first wort" dose?
I like to throw at least 20 grams of Centennial in as a first wort dose, I love the Cenntenial. Yum

I'll be FWH with the Bravo. I think the flavour will be maximised by adding the Centennial at 15 mins.
I was using the lager malt pretty much purley to save my MO for some darker brews. I might get some munich to boost the maltyness. Although hopefully I will be able to afford some sort of good temperature control soon and will use that lager malt for well a lager some belgians and a hefe.

Did a varietal IPA with Nelson Sauvin and it was absolutely stunning. I plan to make another batch.
