Another variation on the "potter" theme, hows this for a stout recipe (the last one I did with just pale, flaked barley and roast barley was a bit "simple" tasting):
3775g Maris Otter (70%)
809g Flaked Barley (15%)
269g Munich Malt (5%)
269g Chocolate Malt (5%)
269g Roasted Barley (5%)
OG 1050, S-04 yeast.
Bitterness: 45 IBUs (no aroma addition), probably from Pacific Gems as they're quite economical to use for bittering!

Love the name, can you do the sarcy Snape voice?
I read somewhere here not to use s-04 for stouts, probably remembering wrongly, perhaps more because its clarity properties are unnecessary with the ale being a stout? Personally I have found it reliable, tasty and easy to use. I could murder a stout right now. mmmmmm. stout.

Upped the flaked barley to 1kg (easy, as it uses up whole bags!) and the chocolate to 360g (again, end of a bag). Collected 25 litres in the FV at 1053, so slightly higher than expected. Bittered to 45 IBUs with Pacific Gem (just 33g

) but no aroma addition. The wort tasted amazing!
Can't wait for this one, should be a cracker.

Looks good that does. Never heard of Beeta hops though! What are they like? I like the idea of all that munich - should really boost the maltiness.

I'm going to dump the Beata, and do 60g of Cascade.
The beata came from here

I've not used them yet, I'll save them for a lighter beer.

This one has gone a little mental while I was at work today.

I left about 8 litres of headspace in the FV . . . was this enough? Nooo . . . thankfully it would seem it was only
slightly too little, gungy airlock and some stout traces about the lid and sides of the FV, but no major damage thankfully. Also thanking the beer fairies for keeping the airlock moving with yeast in it - the FV is otherwise pretty solid as it has a screw on lid . . . could have been a pressure testing experience otherwise!

I'm surprised S-04 tried to do a Houdini. Maybe it's a 'stout thing'?

I have had S-04 and Nottingham behave like this before, if the wort is well aerated and there's some dark malts in the beer (must be something to do with the protein holding the head together in the FV?) it will often go beserk, but I've never seen it
quite this energetic!
It's approaching it's FG already and it was only pitched lunchtime on Sunday!
