Double day - Mild and Best - now with picture goodness

Post by flytact » Mon Nov 02, 2009 1:47 pm

Stocks are very low, so brew partner and I are brewing two 40L batches tonight. Recipes below but I'll fiddle with the hops to use my homegrown Centennial and Glacier as well as some leftover Williamette (US Golding) and other stragglers.

Mild culled from various posts here:
5.90 kg Maris Otter
0.40 kg White Wheat Malt
0.30 kg Caramel/Crystal Malt - 60L
0.10 kg Chocolate Malt (450.0 SRM)
30.00 gm Williamette (0 min)
65.00 gm Williamette (60 min)
30.00 gm Williamette (10 min)

60 min Mash In Add 20.96 L of water at 75.2 C 69.4 C

Old Speckled Hen'ish from here as well:
6.08 kg Maris Otter
0.61 kg Biscuit Malt
0.41 kg Caramel/Crystal Malt - 20L
0.41 kg Caramel/Crystal Malt - 80L
0.34 kg White Wheat Malt
75.91 gm Challenger (60 min)
17.85 gm Goldings, East Kent (15 min)
7.15 gm Goldings, East Kent (0 min)
0.91 kg Honey (A bit unorthodox, but I'm giving it a go)

60 min Mash In Add 24.53 L of water at 76.6 C 70.0 C (Going a bit high on the mash, heard it's good with this beer)

They are high mash temps! That should be some malty beer.

Hope all goes well, i did a double brewday a while back and it was a busy old day :D
But i was glad that i managed it, and it didn`t take twice as long because 2nd brew was mashing while
1st was boiling.

Here's the proof!
Changed the recipe's to accommodate the hops I had on hand. Used Cascade as the bittering hops and Challenger and Fuggles in the Hen'ish. Bittered with Cascade and used homegrown Glacier as 10 minute and aroma in the Mild. Interested in tasting the Glacier.

Mild grains into the bucket:

Running the mash water out of the kettle (on left) and into the tun:

Crushing the Speckled Hen'ish grains:

Both batches mashing away with all the hops pulled from the freezer. Next step, figuring out what to use:

Bringing both batches to a boil:

Sanitized fermenters, ready for filling:

Draining the Hen'ish. A bit of StarSan foam left in the carboys.

In the 7th picture down.

How did you manage to get into the boiler without displacing the mild ? Was archimedes wrong after all ? :?

=D> Just noticed that.
Actually, that's my brewing partner. He often uses our brewing sessions to practice for his other gig as Santa.

Couldn't resist and sampled a half pint of the mild last night. I put it in a corny with 1/2 cup sugar and its only been two days. The beer was clear and delicious. Smelled a bit dodgy though.
I'm afraid that when I move the beer into the fridge and drop the temp from 19 to 9C that it's going to loose the character. I'd put in on the hand pump, but I'm trying to find a rod gasket in metric.

The Hen'ish is still in the primary.
