Looks great Mysterio, I'm a new USA hop convert myself after my Vienna / Cascades APA, so I'd be very interested to see how it comes out.

How did you manage to miss your OG? Why don't you just dilute it down to 1.053?

I have no idea what happened. The 1.060 IS a result of dilution - I got 13 gallons! I was worried about diluting hop character by adding more water.

I must have F'd up somewhere anyway. I did sparge much slower than usual which may have made a difference. Or maybe I just didn't weigh out the grain properly.

i steep my hops after flame out for 60 mins you get a cracking amount of hop flavour that way, most of my comercial brews are like that today im adding nelson sauvin for bitterness and a wa-hopping (badom tish- i do apologise) 5 kg of mount hood at 0

seems to work all right......

Just chucked in 45g each of Cascade & Centennial dry hops. They're just floating on the top at the mo so I guess I'll go in with a paddle tomorrow.

Interesting, so that's about 92g in at the end for aroma for a 25L brew length (a barrel is 136 L right?). No wonder I complain about not enough aroma - I need to double up my finishing hops! What style of beer is that with the 5kg of Mt Hood at the end ? Or is that something standard on all your beers?

Racked this into kegs tonight. I'm a little bit surprised the aroma is quite faint. I was expecting a green smog of hops to overflow from the sample jar like dry ice and asphyxiate me. Oh well. I guess it is more of an APA after all. Maybe it just needs a little carbonation to lift it out of the glass. Might have a sneaky pint later on.

This turned into a nice beer, the hop aroma blossomed over time. Right now as i'm sniffing it, it has a great fresh hop aroma. So i'm a dry-hopping convert. I think the hop oils become suspended in the beer and are brought to the fore via carbonation :?:

This is a good starting point for Goose Island IPA. It's quite similar only not quite as punchy as GI. The GI IPA also has a little more residual sweetness. Incidently I was not trying to clone this beer but I had a bottle at the weekend and it was remarkably similar.
