I have made Ditches Stout and it was very nice. However I did find it slightly thick on the tongue and I wouldn't mind it a bit stronger for Christmas. Would it work with an additional 500g of Glucose powder?
So the recipe would be Coopers stout with 1Kg Medium spraymalt and 500g of brewers sugar.
Is that too much sugar? I certainly don't want it to be thin on the tongue but there is a lot of malt there and the instructions say to use sugar anyway.

So are the cidery flavours introduced because I am using the spraymalt and sugar? Would there be cidery flavours if I made it per the instructions, ie the Can and 1Kg of sugar?

Coopers themselves sent me one of their Premium Stout kits and put in a box of their BKE to go with it. So, I guess we can see what they think .....
I've not made it up yet. Very soon will be though. Only, I don't think I'll be using the BKE in that one. I want to taste that as a sort of 'Premium Ditch's Stout'. I'd like to compare the kits contents to a regular DS. Then I'll put the BKE into a DS and see how that compares. (Is that clear enough?)
I have tried using about a gallon less water. Frankly? It turned out a whole lot better than Guinness ~ not difficult! But, it just wasn't something I wanted to call the lads round to taste. I found it lacked the depth of flavours I find with bang normal " Ditch's Stout ", made my usual way.

I tried a well aged (read: bought cheaply by my mate as it was passed it sell by date) bottle conditioned Coopers Sparkling Ale and I really liked it. I put on a Coopers Australian Pale Ale kit last night with 500g light spraymalt and 500grams of glucose (that's why I got the idea for the stout) so I'll wait and see how it turns out!

I've made many of THE Stout. The 1st time I did it with BKE 50/50 malt and glucose. It was very good. But the next brew was made with 1kg Medium Spraymalt. It was thicker on the toungue. I prefered it, A lot. but you may be corect. If you want a thiner brew, try BKE. Go on experiment. its one way to be sure if it's for you.
I've drank Coopers Sparkling Ale. And I've also made it, With the full monty as recomended by Coopers on the website. Its a very strong quality brew, But It aint a Honey beer. Cheers

My wording was somewhat ambiguous - I'm well aware it's not a honey beer but (to me, on the night) it had the flavour and aroma of honey. It was wonderful.
I went back to the shop where he got them form and they only had in date bottles (how rude!). So I bought four and have left them in a cupboard. Should be ready by March as the sell by date is February
