My version of xmass brew last year had 3 sticks of cinnoman an was fine I dont think that the extra one will over power it.
I added 30g being completely useless at converting between oz and grams and I'm not looking it up I'll leave you to convert, again this didnt overpower it and if anything could have got away with a little more.
I used whole cloves and cant say they were particularly noticeable the main flavour I get is nutmeg and cinamon.
So perhaps crushing might get them to release a bit more flavour.

It look a good recipe, nice and boot warming for those winter nights :lol:

aup escapizm, likesbeers got it about right,
the level of cinimon and nutmeg is about right for my taste, if i was to do this recipe again id up the ginger (would have perferred to use fresh grated root aswell ) , cloves and orenge zest, i cant really advise too much on the spices ect ,its the first time ive used them in a recipe, but what ive used has turned out nice...

Oh my god... Put mine on at the weekend and the smell was the best yet. My recipe is much the same as the thread originators with some slight twists.

6000 g pale malt
200 g crystal malt
100 g chocolate malt
110 g torrified wheat

34g Northdown 90 mins
12g Northdown 0 mins
35 g Challenger 15 mins
9g Challenger 0 mins

last 15 minutes added
3 , 3inch cinnamon sticks
1 tsp nutmeg
1/2 tsp cloves (cracked)
zest of 4 oranges
70g of ginger


The 0 mins hops are in an effort to get some depth, I read this thread on APA and got some good info on late hopping viewtopic.php?f=5&t=27701 so though id give it a go.

This one’s going in bottles as it may last a while if it’s a little special and not exactly a session beer :shock:

ive finaly settled on a name , the christmas brew is going to be called "Festive fistfight"

So it must have been in the bottle about a month now?
Have you tried a sneaky taste? [-X
Mines sat in the barrel and I had a sneaky half at the weekend got to say great but its lot a lot of the spice additions :(
But then again had a cold at the weekend so taste buds were shot to pieces so might just have to go and try another :D

i did have one bottle but it when i was abit p!ssed up ,so i cant really remember exackly what it tasted like #-o i do remember it tasted of cinnimon and nutmeg more then anything, ill crack another one open at the weekend and report back.... :mrgreen:

I had a pint of Festive Fistfight last night, iv got o say im really happy with it, its definatly got alot of cinnimon and nutmeng on the nose, a deep roasted flavour from choclate malt, with a slightly sweet, zesty after taste, there a real diference in quality using Brakspear yeast also,
it looks black as a stout but when you hold i upto the light its a lovely deep red colour, had a nice lacy white head on it too,

so now ive got to do is make sure i dont drink it all befor christmas! :mrgreen:

My version (very similar) is almost ready to bottle. Hope it turns out as well as yours, Kev. It does smell good as its fermenting :D

Hi,

I came across a recipe on the Coopers websire for 'Old Spiced'... :D

Which is a Coopers Dark Ale kit made with a 1kg of DDME/BKE and 2 teaspoons of ground cinnamon (all lobbed in the FV together) and made upto to 22litres...

Might have a stab at that for next Christmas... :)

Otherwise a extract OP based spiced beer might be on the cards!

Just tried mine, I know it's 4 weeks early but was purely for R&D...

Anway swmbo, brother in law and me think it smells exactly like dandelion & burdock :). Nice body and not too bitter. This will be great come Christmas week!

Very happy!
It's dark, rich with tons off body and very arromatic. Head was a little short lived, it actually fizzed like pop. Maybe dishwashed glass had some influence. Bring on Christmas :)
