I use John Bull extract (for partial mash) and found out recently they do not remove the hot or cold break, which can result in the generation that extract twang, I mailed the company to find this information. I have tried boiling and late extracting addition to no avail, I think the cold break contains a lot of lipids, which can be oxidized and if not removed may affect the beers flavor. This twang could also be due to old extract, and I not sure how long my HBS has had it and how they store it. Anyway I am going to all grain a go!

I have had good luck with it the two times I have tried it (a dry and a sweet stout).

Always got on well with it.... don't use it if it's over a year old though. If your recipe won't use 2 whole tins it's more expensive but I got on well with using a tin of this stuff and making up the rest of the extract with spray malt which comes in 0.5kg bags and is easy to weigh out.

Once you've done a couple of brews I heartily recommend moving onto steeping some crystal malt to add to the brew as this really gives you some lovely fresh grainy flavours more like you would get with an all-grain brew + it's cheap & gets you learning about some basic mashing.

I've just boiled some John Bull malt extract with some hops. It did look very much as though the hot break was still present. But the hops should have filtered it, as with all grain, so does it mater, in this case? It would be different if you were just pouring the cans into a fermenting bin, of course.

Do they remove the hot break from their kits?

So perhaps they assume that you'll boil the extract with your hops and thus filter out the crud. I bet an awful lot of people pour the cold extract straight into the fermenting bin. I used to.
