Mash Leftover Cookies
Mash Leftover Cookies
I always feel wasteful chucking away my mashed grains. So this time i made some cookies with them.
The recipe:
-400g mash leftover grains (still wet)
-100g Flour (any type)
-75g Sugar
-80ml Vegetable oil (or margarine)
-Large handful of raisins (or dried mixed fruit)
Chuck this all in a bowl and mix it up. It should be pretty thick and gooey. Put a sheet of greaseproof paper on an oven tray and dollop the mixture on to it. This should make about 10-12 large cookies. They will spread a bit in the oven, so leave some space between them.
Put them in the oven at 180c for about 15 minutes, or until they are browning at the edges.
Leave them on a wire tray to cool.
They do taste quite "wholesome", so if you are a maryland-only type cookie eater you may not like them. But they are pretty healthy as cookies go, and i think they' taste great. My toddler agrees, having come back for more three times.
I did this with a wheatbeer mash, which is possibly less tasty than other mashes. I'm going to try it with my stout mash next time - this should have a nice roasty taste.

I'm surprised they aren't unpleasantly husky. Might give it a try

You do get the odd soft bif of husk in your teeth, but it's not something that you really notice. They are not hard in any way.
Crystal is quite a husky grain IMO, and i had 500g of it in a 4kg mash, and didn't really notice any huskiness in my cookies.

sounds good, I almost baked today... *you have to do something when you're out of work!
Not used the flour in ages, it was moving... so though it best not to bake!

Made these today - most favourable comment I got was 'it tastes like animal food'

Well, best we blame the cook, not the recipe because I thought they were at best, bland and I don't think it would be unreasonable to call them disgusting

I think I'd agree, butter makes for a nicer flavour.Me thinks that you used too much grain....I believe that I would have added an egg and 1/2 tsp of salt and used butter rather than the oil . There's always next time.
And if you replace the mash leftovers with some nice fresh porridge oats you've got a lovely crumbly oatmeal cookie recipe

Nice with a few bits of dried cranberry and chopped white chocolate added.
Or some chunks of plain chocolate and some orange zest.

I suppose the type of grains in the mash makes quite a big difference too. Things like crystal and chocolate malt have a really nice taste as they are, whereas wheat malt and some others are very bland.
I mashed with about 50% wheat malt over the weekend, and remember tasting the leftover mash and thinking "I'm not going to make cookies with that". It had no taste.
The mash i did with the original recipe was about 12% crystal and maybe 5% choc.
It surely can't be just me, because both Mrs. and toddler thought they were good.....

That sounds like an omlette to me. How about adding lots of golden syrup and nuts to make some sort of flap jack? Will have a go. Reckon you could count it as 1 of your 5 a day then.
