Pomegranate wine.
I used a 100% juice made from concentrates.
Sold in our supermarket.
Contained (so the label claimed) 40% pomegranate,30% red grape,30% white grape juice.
It had a SG of 1.050, so added 92 grams of sugar per litre which gave me a final reading of around 11%. Good enough and not too sweet and not too dry.
Perfect for us and the friends.
I used a Gerwins Beaujolais yeast.
Racked 3 times before bottling and left for 7 months. Dark and coolish place.
It is the best rose wine I have ever made and went down well over the festive break.
Made 10 litres at that time and now have another 15 litres sitting.
You need to keep it to get the best crisp taste,colour and flavour.
What else on the go.
Well...5 lites of sherry, now 7 months old,about to rack for the first time and set off again with a scrape of the old yeast sediment.
Should be ready for next Xmas 2007.
I found in the supermarket,cool section,a mixed fruit juice.
Cherry,strawberry,cranberry,raspberry,blueberry at 50% and mixed with grape juice(think white) 50%.
This was started in November so too early to say how good.
5 litres made and used a burgundy yeast.
A beerless Xmas for us,only factory beer available:-# .
