Wherry - only 4 days in the FV?

Guys,

I've got a Wherry on the go in my FV - its only been in there for four days - today I thought that I'd take a gravity reading - it is 1012 today. Is that going to be right after only 4 days? temp was just a gnat's whisker over 20c

Should I keg it if the next day's reading is the same or should I wait a few more days and see if it drops any lower?

That sounds like a great reading to me. If you are in a rush to keg then if the next day's reading is the same then do it. Leaving it for a few more days will do no harm, it will actually reduce the amount of sediment in the keg.

that's exactly the same as me, reached my target reading in 4 days. It's been in the keg a week now and tastes very good already, drew a small sample from the keg this morning and it's got a wonderful creamy head on it. I tried a bit on Saturday night just before I had a session on a Martsons selection box and some Tangle Foot and to be quite honest I enjoyed the small glass of cloudy Wherry even more than the commercial ale and really had to resist drinking more. If it's this good after a week conditioning then roll on Christmas =P~

great thanks guys.

just measured the gravity - it is the same as yesterday so I think I will bang it in the keg tomorrow. Might even be drinkable by Xmas at this rate!

Just to add my 2 cents, I recently did a Wherry and it was at about 1.012 after a few days and seemed to be staying steady. Other things conspired to make me unable to keg it until 2 weeks later (3 weeks after starting it off) and it had dropped two more points in that time, meaning it hadn't really stopped before. Seems to me that slowly and patiently is the way to do things...

I'm actually in no rush so I may just leave it a few more days. I wasn't expecting it this Xmas really anyway.

Hi guys,
I've got some Wherry going too. No bubbling after 24hrs so I wrapped it up and put it next to the radiator to raise it's temp and now it's bubbling nicely. As this is my first bitter (after 3 types of Coopers lager) I'm not sure if I should put any sugar in the bottles?? I don't want the bitter to be fizzy (obviously!) but I'd like it nicely conditioned.

I've got some Coopers dextrose tablets and I'll be using Coopers 740ml bottles.

yeah you need to put sugar in the bottles as this will help with carbonation etc.

For my next brew I am going to put it in bottles so I'm planning on using ordinary granulated sugar for the bottles - I may boil this first and add it to the mix before bottling.

Ok, thanks. I think I'll put one lozenge in each bottle. Coopers lager has two per bottle.

I used 85g of regular demerara to prime my keg of Wherry, seems to have lent it a nice hint of caramel which I like.

Hi,

i use 3.5oz (100g) of sugar in my kegs for secondary fermentation and they always come out fantastic. If I was you I would keg it as 1012 is the norm for Wherry, I kegged mine at 1012 also.

well as an update I've just put it in the keg tonight - gravity was 1011 in the end. Just hope the keg performs well - I tested it prior with 23l of water and a shot of c02 and spotted a leak from the tap seal. Vaselined the rubber washer/tightened it up so hopefully it won't leak now the beer is in there. They're hard work these King Kegs aren't they? Bottles next time I think..

as an update - I am now drinking this and rather nice it is too!

I have a fixby brewing in the FV now so fingers crossed for this too.
