I'm thinking of boiling a bag of dried fruit and chucking it into my next TC to add sugar and fruitiness. Any thoughts?

i bottle my first TC about 4pm on new years eve and by midnight, 12 liters had gone already! no time for aging but everyone loved it. an unprecedented success i would say. thanks to all on this forum for recipe ideas.

i used the basic 100% apple juice recipe on my first batch. no apples, just juice, tea, inverted sugar and premier cuvee yeast. it cleared well without finings and looks great in clear bottles. everyone likes the fresh clean taste and the results so far this morning is no hangover! my wife has never had cider before and she finished about 8 33cl bottles and she seems fine today. other friend commented on its hangover free nature also. i actually don't really like cider but i was drinking it too and found it quite pleasant.

i made 3 versions: dry, medium and sweet by topping up with 5%, 12% and 20% apples juice respectively. all 3 were popular about the same level, no clear winner on the sweetness so i guess i'll have to produce a couple of versions for sale later.

BTW, my OG was 1075 which gives about 11% ABV when fermented to dry which is obviously really high for a cider. but after topping up i figure that comes down to about 9% and no one said it tasted too strong so i'm pretty happy with that OG.

OK guys, I'll be putting on my first gallon of cider using Tesco apple juice this afternoon with a view to scaling up if successful.
My intention is

5l Tesco Apple Juice
Half a bramley, skinned and grated
Half cup of strong tea
1 tbsp value runny honey
Heaped teaspoon of SuperWine yeast (the Wilkos stuff)

I'll heat 1l of juice with the honey, tea and bramley to dissolve the honey and help break the apple down

This will go into a glass demijohn with an airlock and then we'll see what happens.....

I'm looking for a fairly dry, cloudy, still product around 7% so my question is, do I need to add any sugar to the pan or will the honey and natural sugars be sufficient to reach my requirements?

Thanks in advance for any tips/advice and of course, I'll keep you updated.

If you measure and give your Original gravity then people can work out the potential alcohol, with the vague detail you have given it's impossible to say what your final gravity and hence the alcohol percentage will be. Get a hydrometer and measure it.

Thanks for your reply. I have got a hydrometer and will take the OG.
I was just asking if you thought the recipe would be OK as is, or would you recommend adding extra sugar?
I can fine tune on subsequent brews, I just wanted the first one to be 'in that area' - and drinkable would be nice too!

I'd imagine you'd be in the ballpark, but really am not sure what the tesco value juice comes out at, I tend to use lidl cloudy and it comes out around 1.050 until I add a bag of demerara and a jar of honey, which then puts it up in the high 8's, I don't even bother to measure the stuff, just pop it in and let it ferment out, simple.

Yes, I don't normally bother with measuring the alcohol content.
I probably will this time as I'm reporting it to this forum and it's my first attempt at making TC.

So you would add a full bag of sugar and a full jar of honey, presumably this is for 5 gallons?

Yeah for five gallons, I don't think yeast would even start on a gravity that high if it were a gallon :)

I have one on at the moment for the brothers belated Xmas present, I only found out I had him for ChristKindl two weeks before Xmas and seeing as he really likes my ciders, I decided to do him 5 gallons of it before pitching my own one next.

Whats the bestway to finish a cider, rack and leave? rack how many times? add sugar/apple juice for secondary?

My method for what it's worth, I don't consider it to be turbo cider cos it sits 2 months in the fermenter.

I buy lidl cloudy apple juice, dissolve a 1kg of lidl demerara sugar in some apple juice and then add a jar of honey to the same mix, bring almost to the boil to sterlilise the sugars and honey. Add a strong cup of tea, made with three or four bags. Horse the lot into the 5 gallon carboy then top up with apple juice to 5gallons, add some yeast nutrient and some youngs cider yeast then ferment under airlock for two months. Normally at home I then put this in the 5 gallon vinotainer and serve from there, for the batch I'm doing now it'll be bottled as it's a gift.
Easy as it gets, no racking not a lot of faffing about.
Close to turbo, but not quite. This brew normally needs something to sweeten it when drinking, my brother tends to cut it with seven up, personally I add more apple juice at serving time.

I call it lidl-e-ider cos it's all lidl ingredients :)

Quick q, firstly will be adding some bramleys to my cider, is it imperitive to skin before grating or would you guys recommend skinning first? Plus, for priming a 25l batch im thinking of adding apple juice at that stage, 1l, 2l, any thoughts?

When topping up my TC to the gallon, will I need to sterilise the bung/airlock after removal, or can I just quickly top up from the carton and drop it back into place?

Guzluka, i peel them basically because i dont trust were they have been stored... thats all. im sure it wont make a difference if you grate them. but you would be better off blending them.

and as for priming one ltr will be more than enough

My first TC was started 7 days a go. Can anyone tell me if I have made it correctly?

4.5l Lidl AJ (100% stuff)
11g Champagne yeast. That's it!

Will the lack of teabag make any odds to the end product? [-o<

It had an OG of 1.055 so I didn't have add any sugar (the missus like a 5 to 6% guzzling cider and it is for her).

I just put the juice into a sterilised DJ and chucked the yeast in. It started fermenting like crazy within the hour and stayed that way for at least three days. I then had to go away for work and have just returned (last night). It has stopped bubbling and is very, very cloudy. What should I do next? My first thoughts are too leave it as is to clear a little.
If I had all the money I'd spent on brewing... I'd spend it on brewing!

hi everyone,

i'm gonna try out this turbo cider, can anyone give me a few pointers...

i plan to keep it very simple, ie 5l cheap apple juice, 250g brewers sugar and bread yeast, can anyone tell me 1)if this is drinkable? 2)what the hangover is like? and 3)if its worth chucking a cup of tea into it for the tannin? 4) will one sachet of yeast be enough or should i bung 2 in?

also, i prefer my cider to be dry and not overly sweet, is there anything i can do to achieve this??

hope you can help,

cheers guys

KJ :D
