Having brewed a version with Centennial and Cascade, I'm thinking of brewing a third version at the weekend if my hops arrive this week:

This time, I'll use Chinook as the steeping hop. I'm also considering dry hopping with some chinook and either fuggles or goldings. I've noticed that the 1st attempt (centennial) had lots of aroma when it was first barrelled, but this has subdued somewhat. The 2nd version (Cascade) is still in primary, and from tasting I'm hopeful it will turn out nicer than the first.

I drank a fair bit of Wherry over the weekend, and none of these attempts are that far from it, either in colour or taste, I reckon woodfordes must dry hop though???

3.80 kg Pale Malt, Maris Otter (5.9 EBC) Grain 90.5 %
0.40 kg Caramel/Crystal Malt - 60L (120.0 EBC) Grain 9.5 %
45.00 gm Fuggles [4.50%] (60 min) Hops 19.3 IBU
30.00 gm Goldings, East Kent [5.00%] (30 min) Hops 11.0 IBU
30.00 gm Chinook (30 min) (Aroma Hop-Steep)

90min mash @ 67.8

In any case I'll have 3 barrels of super ale.....

OK water is on to heat, just transferring Wherry II (Cascade) to the barrel, have decided to dry hop a handful in the barrel in a muslin bag. I droped it in beer that I extracted to add 80g sugar to, so the hops got a little hot water extraction whilst the priming mix was sterilising in the micorwave... havent done this before, hop it will be ok????

Also this batch I'm brewing I'm using pellets for the first time, I assume I still weigh them the same as for whole leaf? not worried about ajusting for AA cos' they are only for steeping at the end of the boil.

Aghh Mash is on, took my eye off things and the temp dropped a bit too quick, was aimin for 67-68 for mash, ended up just under 66. Assume this will just result in slightly more fermentables, but given this has 400g crystal, I guess it will still have decent amount of body?

or should i thin the mash with some boiling water to up the temps a little?

isn't it funny how things tend to have a habit of sorting themselves out???

I've just achieved my highest ever efficiency ever into the boiler (89%), from a mash I thought was going completely wrong....

On the boil now, just added the first hops., hopefully be all finished in 2 hrs

I've been reading with great interest the posts relating to the Wherry clone recipes recently as I was the founder and owner of Woodforde's and creator of most of the Woodforde's brands (ugh! hate that term). I retired from the business in 1999. I can tell you that the hops used in Wherry bitter are Goldings and Progress in the boil and Styrian in the late soak. Woodforde's do not dry hop. The Grist is Pale, Crystal and Caramalt.
I regret that I musn't tell you the proportions and the brewing tecniques - these are the "intellectual property" of Woodforde's and I am legally bound not to divulge. However, I hope this will help in your attempts to clone the beer.

It's nice to have your input. I used to live in Norfolk and often visited the Fur and Feather. Wherry and Norfolk Nog were my favourites :wink: :wink:

Many Thanks, I've been wondering how Woodfordes got that lovely hop aroma for years.

Nearest I got was using 75%Bramling Cross in the boil and 25% Cascade at the end but this tasted a bit too much like a certain Crouch Vale product....

Anythiong else you can talk about ? like Headcracker / Norfolk Nog/ Great Eastern Bitter ?

I'm just brewing this recipe now. Will be interesting to see how it goes as on an all grain basis (biab), I've only done porters previously, and I also used both pale and dark crystal as it's what I had in.
