What yeast for Old Tom?

im planning on doing a little batch of Robinson's Old Tom so that it has a LONG time to mature before the cold months kick in.

Im using Graham Wheelers recipe from BYOBRA but unless im being blind it doesnt have suggestions for which yeast to use.

Either dry or liquid yeast would be fine. Any help would be much appreciated!

This is a high gravity beer right? I'd be tempted to use S-33 myself, seems to do well with high alcohol.

Hi, i used a packet of Nottingham. Its only been in bottle a week, and for quality control reasons, I sampled some yesterday... Its gonna be fantastic... Hope this helps?

im hesitant to use nottingham after my last batch was a dud. might give the S33 a whirl or maybe ill splash out on a liquid yeast (no pun intended)

For 5 gallons, I'd use two packets of whatever you choose - 1080 is a strong wort and one packet may really be underpitched slightly. Anything will work well - I'd probably plump for S04 myself, but that's 'cos I have 4 packs in the fridge :lol:

Ah im only doing a 2.5 or 3 L batch as I dont think the full grain bill would fit in my mash tun! plus its not a beer you want pints off just something to sip on while watching a film.

Ah you'll be fine then (assume you mean Gallons!) - the only thing about strong ones, is that you always wish you made more as it takes so long for them to get to their best ;)

ha ha yeah i did mean gallons!

good point about wanting to do more but even if i did id have to mash in 2 goes anyway. its nearly 8KG grain for a 5Gal brewlength and in a 25L bucket that just wont fit ... assuming i want water in there aswell!

A bit of a tight fit, yup!... (I managed 7.8kg in a 24L mashtun once - a very thick mash indeed (must get strike temp right first time here - no room for topping up!), which I left for a good while (and then got ~4G@1090) - and vowed to get a bigger tun to do that type of thing again... much easier with a 44L one!)

Did a batch of Old Tom last year with T58 and worked a treat! Very close to the real thing

I did a 15L batch of RIS with WLP007. It had no problems fermenting out 1.083 down to 1.020. Really nice yeast. I'll be using it again in high ABV brews!

How did you find the floculation of WLP007? How clear was your beer post fermentation?

that yeast drops really bright. I've never needed to use finings with it. :D
