Liberty Ale and Wit brewday + PICS

Getting another double brew day on the go today. :D :D :D

First up is an Anchor Liberty type ale. I'm pretty much all out of MO (all but a KG or so). So i'm subbing it up with lager malt!

Then after that I'm doing a Belgian Wit. I got a sachet of WB-06 ages ago, just incase my WLP300 didn't take. I'm not a fan of dried yeasts for Weisse beers but I'm willing to give it a try in a Wit.

I'll be Interested what you think to WB-06...
I found out a commercial stout from Crown Brewery is made with it... though I never tasted the yeast in their Wheat Stout. Might be worth a shot in a stout just for the heck of it.

1st brew almost chilled. Also batch of cherry weisse bottled, IPA kegged with gelatin. Now I need a beer before the Wit goes on!

Bloody hell, you're a busy man today. Is there real cherries in the Weiss?

While I still think it's hard to beat the WLP300, I do like the WB-06. I tried a commercial hefe last week that used the WB-06 and it was very decent.

I'll definately be interested to here how the Anchor turns out. I've got loads of Cascade from Rob that need used in something. Either this, an SNPA clone again, or a Mirror Pond Pale Ale clone.

We were going to use real cherries until we went to Morrisons and realised how much it was going to cost! :shock: We ended up using one bottle of this for 9L. It is very nice!

I would never use anything but WLP300 for wiesse these days. I have read on another forum that WB-06 can be quite good for Belgian Wit beers so thought I'd give it a try!

If you pm me your address mysterio I'll happily send you a bottle of the Liberty when it's done :D .

FWH. Found a little bit of Northern Brewer in the freezer so bungged them in as FWH

about 75g of cascade. Decided to just split it 30/45 for the 15 min, 1 min addition

All in all this went well. I ended up with 20L @ 1.072 instead of 23L @ 1.061 but I left it so it should ferment out to 7.4% :shock: :shock: :shock: :shock: Looking forward to that!!!!

I ended up with 19L @ 1.043 intead of 1.050 so it should end up at 4.3 instead of 5.1! oh well!

You've set me off, I have some WB-06 in the fridge that needs using... It might have to be a Wheat Beer type thing soon.

Mate, you won't regret it. The smell coming from the FV is fantastic. I'm hoping for something between Hoegaarden and blue moon.

I plan on doing the same recipe again with WLP400 to see what the difference is in the finished beer! :D :D

last time I used WB-06 it was in a Geordie Lager kit, which made an interesting beer.

I'm liking that matey. Looks like some kinda dopple weizenbock, but a shit load hoppier! :D :D :D Do it! In fact.........I'm gonna do it! Wicked idea. I may scale back the IBU's a bit. Now, to use a bock yeast of a weisse yeast? I'm gonna say.............WLP300. It'll have the awesome weisse flavour, and be able to demolish the 1.069 in it's sleep. I may even go up to 1.085, just for shits and gigs! :D :D

Aye, I was pretty beat after. I'm really looking forward to the final results of these two! they both incorporated 1st for my brewing. 1st time using WLP051, and 1st time making a Belgian wit, 1st time using WB-06

I'm very pleased with how 'white/pale' the Wit ended up. It was exactly what I wanted it to look like, even it the OG was a little off!


Both are bubbling away nicely in the spare room so only a couple of weeks and I'll be able to see if it was worth it!

Well, the Liberty is now dry hopping in a corni with about 30g of cascade (all I had left. I'll eave it for a week or two and if it needs more I've got soem centenial (not to the recipe I know but it's 7 odd % as well so it's defenitly not a like for like AL clone any more! :D)
