Damn the expense Mid Atlantic IPA

I continued to tweak my original Damn the expense IPA and arrived at this recipe below. The IBU's, colour and alcohol levels have been dropped and i've upped the aroma hops. Hoping for something rather quaffable for over the Summer. Its a 12.5 gallon batch. Will be brewing it on Wednesday, grains already in the tun and water ran into the overback, that's as far as i'm going today!

5.80 kg Pale Malt
2.50 kg Wheat Malt,
2.00 kg Munich Malt
0.55 kg Caramel/Crystal Malt - 40L
3.50 oz Northdown [8.50 %] (90 min)
1.00 oz Goldings, East Kent [5.00 %] (12 min)
0.50 oz Goldings, East Kent [5.00 %] (10 min)
1.00 oz Goldings, East Kent [5.00 %] (5 min)

Approaching it sideways kidding myself on i'm not really going to brew! Can't help myself. Made up a new copper filter today as losses were too high with the old one. Think i've got it down to under a pint losses to the copper.

Good stuff.... mine is pretty good, right down to the last cup-full (not taking into account hop absorption) :)

Nice one, i'll take a measurement to see later. I think i was losing around 3 pints with the last one!

Did a test with the new hop strainer and my losses to copper have dropped from 1.5 to 2 ltrs :oops: to 150ml. Feck, it only took me a 1/2 hour to do that. All those pints down the drain(well on the flowerbeds but you know what i mean)! Hopefully it will give me a clean clear run Wednesday.

That's this one done. new hop strainer works very well. Excellent crystal clear wort, best i've had yet. The sample you can see below was off the 2nd ltr being transfered from the copper to the FV. Slightly modified the recipe. Ended up with 55ltrs at 1.044, so should be around 4.1abv when done. 8 to 10 weeks on the shelf will make this my Summer beer of choice hopefully. 10 hour mash, 90 minute boil and a 90 minute settle and chill. Hoping these hops meld into a spicy tropical citrus burst of beerness. Sorry no photos SWMBO had the camera at nursery today. Second try for 250ml of yeast from my last batch of US-05.

Wort looks amazing! I kegged the demonstration beers today. We forgot the whirfloc so the beers are pretty cloudy :(

No matter, never been that hung up on crystal clear beer,its the tast that counts. If anybody asks tell them its the style of the beer!

Noticing a large difference in the yeast performace as a repitch. I pitched around 250ml of US05 slurrey into this batch, very clean with no visible debris in it. It took off well at 9 degrees and had formed a head by the next morning. Its not an explosive fermentation but it is a noticeably thicker krausen that pitching from a starter made up from dry. Its currently sitting at 11 degrees and giving off nose crinkiling CO2 levels and seems to like its enviroment.

I thought US-05 gave a much better flavour (cleaner) when re-pitched.

That's what i'm hoping to find out. I'm also interested in doing early comparisons to see if i can pick up the flavour(or lack of in a repitch) that you were speaking about in the US-05 thread. Great this almost sounds like i know what the hell i'm speaking about. Right i'm off to dig out more of my new path.

I'd like to say its too early to be drinking this beer but its only just going on the flavour. The only give away really is a slight 'fresh grain' thing going on. Apart from that its ace!

The amarillo and Simcoe hops really come through nicely and give a tropical fruit flavour to the beer. Slight floral and spicy are from the EKG's, merest hint of blackcurrant hiding under the tropical profile from the bramling, smooth and only slightly bitter. Going to watch this one for it shaping up and tank the lot before it loses its hop profile. Glad i dropped the ABV and bitterness. Made it much more accessible at a stupidly early time.

No noticable yeast profile in this its all hops and slight toffee.

Sounds like a good result. I just can't get my head around US-05 fermenting that low. Definitely going to try that.

I've got my own 'damn the expense' IPA in the pipelines...

Please share when you have finalised the recipe! I received a similar reaction from Ken at Inveralmond last week when i told him about fermenting at 9 to 11 degrees. His immediate reaction was that i was using a lager yeast. He was' one eyebrow raised' sceptical when i said no its an ale yeast. Hey ho, the way i see it is that established wisdom is there to be trialed isn't it? No way a commercial is going to tie up FV's the way we can! They need the through put volume to make the cash. He also had a minikegged IPA with him and we had a discussion about IBU's. What his are(40max) and what mine are(average is 70). I came away from that night KNOWING that the Glasgow pub project had introduced me to a totally top fella but more that that the restrictions that he works with as a commercial brewer,hadn't really thought about that too much.

We are very lucky that this site exists and i for one am now making beers that there is no way i would be trying if i was 1 guy in a room with no net and a boots kit to hand! Cheers Jim!
