StarSan is a mixture of acids and its effectiveness relies on the solution you make up having a pH of less than about 3.5.
Many tap waters around the country have carbonates naturally dissolved in them which raises their relative natural alkalinity levels.
Alkalis neutralise acids so if you mix StarSan with these, the resultant solution will not be acidic enough for the StarSan solution to kill the bugs.
You can easily tell if its not ok as the solution will be cloudy if it's not acidic enough.

Using distilled (DI) or reverse osmosis (RO) filtered water has no mineral content at all so you can be sure that the solution you make up (1.6mls per litre of water) will be inthe correct pH range.
I keep a stock solution of 10 litres and check it each time I use it by placing a drop on some litmus paper. I use RO water and the pH of my solution is usually is 2-2.5 which is more than acceptable.
Hope this helps

Thanks Tricky

I just got some starsan (my new weapon in the fight against phenols). I've read the FAQ on sanitizers, and I've read through this thread.

I remember reading that if you dilute Starsan with distilled water that will make it reusable. However, I also remember something along the lines of keeping it in the fridge. Am I going nuts or is this the case?

I got some Asbo smart price water and added me starsan - it went cloudy :(
It may be possible that asbo get their smart price water from different suppliers in different regios as it's such a low cost item it would cost too much to ship

Happened to me too with ASDA water. Volvic definitely works. Bit more expensive but well worth it. use 1ml SS per 500ml Volvic water and it lasts me months. Also, Volvic is easily available in little corner shops etc.

Why does it not say on the starsan bottle to use ro/di water?

just mixed up my first batch of StarSan with Tesco value water, I take it 'cloudy' means noticeably cloudy?! If so then Tesco Value water is fine :)
