No work for me today. That means a pint this morning, and a brew day.

15lbs. 2-row pale
1lbs. 15L Crystal
.5lbs. Honey Malt
.5oz. Galena 11.4 AA% FWH
.5oz. Amarillo 7.8 AA% FWH
1oz Galena @ 20
1oz Amarillo @ 20
.5oz Galena @ 10
.5oz Amarillo @ 10
Yeast: WLP-029
Dry Hop: 2oz. Amarillo in keg
O.G 1.066
F.G 1.015

Adds for a sweet, nutty and slightly toasted flavor. Good choice in Brown and Special Ales. Aroma is reminiscent of honey, hence the name. Effective flavor contribution from steeping.

Maybe Thornbridge Halcyon? It's pretty much a West Coast IPA. Along the lines of what Brewdog and Thornbridge do.

Interesting formulation for an IPA, most formulations I see have much less crystal malt. Do you find that you need to add more hops than normal to offset the sweetness the crystal and honey malt will add? I have been fooling around with a Dogfish Head 60 minute clone and instead of adding any crystal they added just a touch of amber malt which actually tends to make the beer seem even dryer than it is. Next time I make that bad boy, I'm going to boost the bitterness a bit but otherwise I was really happy with the beer. I have had good luck with honey malt although I added it to a Belgian Blonde which was on the sweet side anyway, the aroma was really nice also.
Drinking:Saison (in bottles), Belgian Dubbel (in bottles), Oud Bruin (in bottles), Olde Ale (in bottles),
Abbey Triple (in bottles), Munich Helles, Best Bitter (TT Landlord clone), English IPA
Conditioning: Traditional bock bier, CAP
Fermenting: Munich Dunkel
Next up: Bitter (London Pride like), ESB
So many beers to make, so little time (and cold storage space)

I find it just adds complexity. I mash fairly low, the yeast is going to mow through this wort and probably end up 1.013-1.015.

Melanoidin malt is the same stuff as Honey believe it or not.

Recipe looks awesome!
