Hi Guys
We will be making our first 5 gallons of stout next weekend, i would like to know what is the best yeast to go for, i have some Safale S-04 in stock but i guess this won't be that suitable.

Given a choice, I'd use Nottingham, which has a dry slightly sour taste which would fit perfectly with a stout. But S-04 should produce a good result.

That's brilliant thanks, i'll use the S-04 as i have it, if it turns out well i will try Nottingham next time.

used s04 in a stout before works fine, i actually prefer s04 over nottingham in a stout as it doesnt impart any taste (or what taste there is lost in the complex stout) - does tend to make it quite "dry" though i found, but i quite like that in mine.

I'm drinking a s-04 stout right now and it's absolutely scrumptious. Also, s-04 goes like the clappers, so watch out as stouts have a tendency to go a bit wild

S-04 for defs. Clean yeast which is what you want in a stout.

The second highest score I ever received in a competition was for an imperial stout fermented with S-04.
I'm just here for the beer.
