I used about 20IBU of cascade for the full boil (~30g) with 65g at 5mins and the same again at flame out.

US-05 sounds like the yeast of choice, although I used Nottingham to good, less dry effect. Can't see much benefit to liquid yeast in this case unless you have some already.

Incidentally, I managed to grab a couple of pints take out of Hophead at the weekend to compare, and my effort is pretty close! Slightly more body and a bit sweeter finish but that is what I was after! I actually prefer my effort as a result.

Its actually very close Floyd, I was quite surprised as I remembered it as hoppier - but that might have been because my tongue and nose wasn't as attuned last time I had it. The aroma was almost identical but the flavour in mine was slightly cleaner IMO, maybe it was a bit younger? All in all, I'm very impressed and will definitely be brewing this again.

Here it is, but it comes with the caveat that the malt bill is not really Hophead - for that go with SiHoltye's recipe on the first page...

Hopheadish (23L)

Maris Otter Pale Malt 3.600kg
Caramalt 0.300kg
Torrified Wheat 0.100kg

Mash 90 mins @ 67C

Cascade 6.3% AA 30.0g 60 mins (~20 IBU)
Cascade 6.3% AA 65.0g 5 mins (~9 IBU)
Cascade 6.3% AA 65.0g Steep at 80C (and a bit of a stir!)
Cascade 6.3% AA 40.0g Dry hop at end of primary for 5 days

1pkt Nottingham Yeast, 14 days primary at ~19C then bottled.

OG 1042
FG 1011
ABV 4.0%
IBU 29
Next Up : Something for the summer
Primary : Nothing
Secondary / Conditioning : Nothing
Drinking : Mosaic IPA

Hi is this the Dried packet of nottingham rather than liquid yeast?

I may experiment by splitting th e23L batch and doing 1 in Nottingham or S05 and one with a liquid yeast with high ester such as Thames Valley 3
To get a nice pear drop taste...

Hi Im thinking of using my Brewlabs Thames Valley No 2 from tube agar and now fermenting in Demijohn nicely!

Does anyone think this may not be the right choice over and above SAle 05? Its just that the profile of the brewlabs said moderate Ester which is pear taste as I understand it and
I would like to get this in the beer, however im not sure if this yeast exacerbates the hops as much as SO5 dried yeast?

(One yeast is a bitter , one is a Californian ale?)

As im a novice still learning, just wanted some advice if anyones had experience of TV3 from brewlabs and the end taste?

I was thinking of splitting the batch, which I could I suppose...and pitch both TV3 liquid and SA05 to compare....

Actually, I love this now. Really need to do a side by side comparison. My mates reckon it's bang on. Perfect brew for the summer!!

Yeh, this recipie is fantastic!

Just done a brew over the weekend and all is well.

Strike temp around 74 and mash temp of 65.5!

The boil with the Cascades was ferocious! I managed this outside but the decking got a coating, suddenly bees started turning up, so rinsed it off!
Its like a volcano!

Due to loss chucked in 5Gm of hops around 45 minutes into boil, and then 20gm at 10 mins, 45 gm at 5mins and 65Gm at flame out for 20 mins or so.

Pumped it all through a hop back filter containing 17Gm of hops and via the plate chiller down to 30 degrees, with hose running in mash tun full of iced water!

Then gravity pumped again through 12 plate chiller into final FV and this time got it down to 23/ 24 Degrees! Better!

OG spot on at around 1.039. Tastes gorgeous! Those late hop additions are the key to the taste!

Pitched Thames valley 3 from Brewlabs that I made 2 days before from Slant.

Krausen that looks like mueseli forming nicely by yesterday afternoon!

Smells wonderfull!

Measure later in week to see when ready to keg....

trying this recipe tomorrow,hophead is my local pubs happy hour ale ,so will give good comparison when brewed.
going for 25 litre brewlength on hophead vII. recipe Grain,yeast and postage works out spot on 25p pint, thanks for tip to thrifty shopper floyd.
Just worried about so few hops going in for full boil, but here goes, will post on results.

Yep, Thrifty is great. Next time I do this brew, I'll be mashing at around 73c as mashing at 66c gave me a final gravity of 1006. Same thing happened to my mate. Might be worth thinking about!

Brew went well, thought i would split the diff and mashed at 70 degrees.Safale 05 now in . Came in at 1042 temp adjusted so took it down to 1038 to try and get good comparison with real deal.Keep you posted.

Down to 1004 today, so reckon your 73 mash temp could be right for next time brew. tasting good, 2 weeks in pressure barrel and then i will find out.
