Just decided to brew tomorrow, going to Leyland home brew now for ingredients - Wheeler recipe - Pendle Witches (Moorhouse's) will brew 10 gallons. I will carry out a sparge reading to check if I sparge to the recommended gravity taking readings prior to the point that I would normally stop, and will stop at 1006, hopefully this will be at the volume of the finished brew which I use for a guide.

I did Wheeler's Pendle Witch for my brew before last. Really nice, great balance of bitter and sweet at the same time. Didn't last long enough for my liking :lol:

This is a favourite of mine having brewed it a couple of times.

Carried out water treatment and boil late last night, approx 11 gals.
Wrapped the boiler with a sleeping bag. Started the brew at 8 this morning water temp was about 70 C, Brought it up to 80 C filled one fermenter with 3 gal and let cool to a strike of 74 C, this give me a mash temp of 66.8 C (5 gals).

Delayed the start of the second batch of (5 gals) for one hour, as above.
This enables me to sparge one lot of grain, by the time that I have finished the sparge the second batch is ready.

The boil and cooling went without any drama's. Managed an effciency of 78% -50 litres.

Safale 04 pitched in two 5 gal fermenters, just waiting for it to start, hopefully soon.

Recently the wife decided to get two kittens, When I got home from work tonight having just checked on the fermentation, which had started nicely with a good head on each 5 gallons of 'PENDLE WITCHES BREW' I removed the loose fitting lids.

The kittens where playing in the garden, and I decided to let them in the house via the kitchen which housed my brew's.
Before I could react, one decided it would be fun to run and jump on top of one of the fermenters, now without a lid, you can guess the rest.
The cat survived, and I ended up having to clean the kitchen carpet, and pouring a full five gallon batch away.
It could have been worse, it could have been both fermenters, I and the cat have got over it, and it is quite funny now - maybe it is to do with the name of the brew!

I am glad that I did 10 gallons, sometimes I brew only 5 and would have had no reward for my labour. My fermenting vessel has now found a new home which hopefully will be cat proof.

The half of the 10 gallon batch that was not affected by the cat's dive is now safely in a barrel.

I will have to brew at weekend to fill my 10 gallon container, ensuring that the kittens don't cause any more drama.

Will probably do a mild, any good recipes will be appreciated.

I intend to brew a mild at the weekend
This is what I've come up with
IQ Mild
25 litres OG 1.033 IBU 15 70% efficiency

2750g Optic Pale Malt
250g Amber malt
250g Crystal malt
200g Chocolate malt
250g Demerara sugar

Mash in 8.5 litres of liquor at 65 C for 90 minutes

Boil with 12g Target hops 10.5 % aa for 60 minutes

If you brew the same let me know and we could have an online taste comparison :?:

How important is water conditioning.
I live in a reputed hard water area
What would be necesssary to improve it if possible

Will give that recipe a go Tubby Shaw, however will be using Marris Otter malt, or I think that Leyland Homebrew has a mild malt, not sure what type it is.
Will the different malt make much difference, or should I mix the two types of malt that are available.

Will have to gain some browny points with the wife after the last feasco, so has to not get to much ear ache!!!!!!!!!

Will inform you of outcome if I get to brew.

I don't really think that the base malt will make that much of a difference, I listed Optic as I got 25kg for £22 today :D
The roast grains in the recipe will cover any subtle flavours of the pale malt.
