Any reason why you are keeping this till xmas? IMO a beer featuring these type of hops is best drunk fresh, not aged

An american Pale Ale would be a good place to start...(?)

Use some brewing software (beer engineis great and FREE-see links section in forum) have a play around using some Pale Malt and bit of light crytal malt and the Simcoe and Centnial hops

Aim for an OG of 1.044-1.056 (whatever you prefer)
And IBU's of 35-45

So you couold use #14g each of Simcoe & Centenial at 90 mins for bittering then something similar at 15 minutes
If you like a hoppy beer don't be shy with the hops at flame out and let these steep for 30mins~80C

I dont have access to BE at the moment in order to give ny more specific advice....

But maybe soemone here as a tried and tested receipe using both these hops....

:)

Hope that helps

I've never tried the green bullet, but the other two are regularly used in IPAs, a lot of double IPAs also. The thing many brewers overlook is that these hops can be very tasty at more moderate levels; you should end up with something good.
I'm just here for the beer.

I have a recipe that uses Green Bullet. It is one of my Lord of the Rings enspired beers

'Bag End Gold'

A golden with Pacific Gem and Green Bullet

Fermentables
Ingredient Amount % MCU When
UK Pale Ale Malt - Marris Otter 1.780 kg 40.0 % 2.0 In Mash/Steeped
UK Munich Malt 1.335 kg 30.0 % 2.9 In Mash/Steeped
UK Lager Malt 0.890 kg 20.0 % 0.7 In Mash/Steeped
UK Wheat Malt 0.223 kg 5.0 % 0.2 In Mash/Steeped
German Caramel Pils 0.223 kg 5.0 % 0.2 In Mash/Steeped

Hops
Variety Alpha Amount IBU Form When
NZ Pacific Gem 14.0 % 12 g 20.0 Loose Whole Hops All Of Boil
NZ Green Bullet 13.7 % 20 g 15.2 Loose Whole Hops 15 Min From End
NZ Green Bullet 13.7 % 25 g 7.6 Loose Whole Hops 5 Min From End
NZ Green Bullet 13.7 % 50 g 0.0 Loose Whole Hops At turn off

Yeast
White Labs WLP051-California Ale V

when I created the recipe I thought it was going to be a blonde ale but it turned out more golden. Just had the last pint of this batch last night so will be getting another on ASAP as it was a very nice beer. Should turn out about 5.5% but you could always change the grain bill to suit your ABV needs :D
