I had an incident on Sunday with my TC.
Had a few pints late afternoon as I mowed the lawn and things outside, then had another as the world cup final got going.

I've no memory of the match at all and went to bed before it was over :oops:
3 pints #-o and it hit like a frieght train, one minute I was fine, next I was like a cabbage.
Lesson learned, 2 pints it is

Well my first TC is bubbling like a good'un but starting to slow down now - been going since Sunday, hoping it'll be ready to rack off at the weekend.

Out of interest (I did search for this but couldn't find it) how much sugar would you recommend in 500ml bottles to give it a nice sparkle.

I was thinking half a teaspoon, but not sure if this is too little. Just dont want to overdo it and have the things blowing up and painting the garage walls :)

I put about 1/3tsp of normal sugar in 330ml bottles and it had a light sparkle
I put 1/2tsp of brewers sugar in 330ml bottles and had a well fizzy drink (2 of them went up like a geyser on opening)
I'd go 3/4 tsp - 1tsp per bottle for 500ml
Best thing to do is to make 3-4 samples bottles with recorded amounts and open them at roughly the same period and see the difference and what suits you for next time.

I'll be investing in some more DJ's at the weekend so I can start a production line :D

Ordered a bag of dried elderflowers, so will have a go at an elderflower cider next week, just hope the elderflower taste comes through.

heh heh.. I had two of mine on Monday evening (had to go home early to work on documents at home). Had one pint whilst working then fancied another... got to 6pm and I couldn't think straight... didn't even see it coming. One minute fine, the next a vegetable. Lesson learned too... I quite like being a vegetable.

Well, tried my first ever batch of TC last night and was quite pleased. For such a short 'maturing' period (obviously due to the Turbo label) it was quite tasty and you could really feel the kick after a few gulps :)

Was very dry which I like but the only problem was it had a high acidity. Not sure if this was from the Bramleys (I used two in 4.5lt) or if it will mellow with a little ageing, but i'd like to try and knock that out of my next batch - anyone have any idea's or tips for a mellower TC.

Mine was very acidic to begin with but after 4 weeks in the bottle this strated to mellow. Try throwing a few cups of VERY strong black tea in the fv when you make it .. or better still, buy and add some tannin. This should cut down on the acidity.

Cheers Tony - I did pop a mug of strong tea in there (4 bags) so it looks like its just a case of being patient.

Certainly is a case of being patient if you want a mellower TC.

yeasty rob, id have only put one bramley in per gallon, but dont worry after a wee while the acidity will drop into more complex flavours. if it doesnt or ya cant wait etc etc, try a splash of apple juice at the bottom of your glass before serving.

Cheers for that, I've been popping a small amount of lemonade in which does the trick nicely in the same way.

I've got some lower alcohol (around 4% max) hard lemonade on the go currently to keep the missus happy but will try a 'softer' TC recipe once my DJ's are cleaned out.

Well, it's my turn to have a go at some TC!

Here's my attempt for 1 Gallon:

Stage one: Initial fermentation:

Juice used and Quantity: Lidls Vitafit Apple Juice from Concentrate, 1.5l @ 0.84p a carton. I bought 3 but maybe could've done with one more.
Yeast Used and Quantity: Youngs Super Wine Yeast Compound, 1 heaped Teaspoon
Other Ingredients and Quantity: 2xBramely juiced in a juicer, 200gm sugar (70:30 demerara to white sugar), 30gm Honey, 1xTeabag.
Vessel Used: Demijohn
Method of adding ingredients into vessel: Poured through a funnel.
Starting Gravity: 1.065
Color/ Cloudiness: Burnt umber, bordering on the ochre (blimey, don't I sound like I know what I'm talking about, eh? One bottle of Mexican lager and I'm a poet! :D ). It is not see through, being pretty opaque at the moment.
Environment: Study, wrapped in a towel
Temperature left at to ferment: 23 degrees.
Time Taken to Ferment: started at 5:00pm on Saturday the 31st of July so don't know yet.

Method:

1. Juiced the bramley apples, each being the size of my palm. I picked them from my tree so they're not up to speed just yet as it is still early in the year for them.
2. Added the juice to the a pot along with the sugar, honey, about 1l of the apple juice and a tea bag. Brought up to a rolling boil for 15 mins, but the teabag was removed after 6 mins. The boil was to help the sugars breakdown
3. Let the mixture cool down and then added it to the demijohn, along with the remaining apple juice and the yeast. I was tempted to add yeast nutrient but didn't. This is my first time and I want to see how it fairs as it is.
4. Popped on the airlock and now I wait.

I will add the next stages as I get there. Can I ask, is the temperature okay at 23 degrees? I don't have any way of controlling the temp other than opening a window, closing a window, wrapping in a towel, etc.

Just so you all know, I'm just about to get a Hoegaarden clone going as well. I'll post that up when it's done, too.

Currently Drinking: Bohemian Pilsner with porridge oats, shredded wheat and basmati rice, along with Saaz hops, mandarin zest, coriander, cardamon pods and Munich yeast. Silky on the mouth with a wonderful summer taste. Love this brew!

dont worry about it. the apples want to get you drunk. now its just time to sit and wait ( or get another few onthe go while you wait...)
