S-189 is the Swiss lager from Fermentis, Barley Bottom sells it. It is dried, yeah.

I used it once and I got diacetyl from it, I'm prepared to give it another chance though. People rave about it.

Been trying to take pictures but i'm hungover as hell and they all come out shaky.

Cheers!

thats interesting... I 've only used 2 genuine lager yeasts S23 & Brewferm Lager. I got the 'cleanest' most lager like flavours with S23(3 brews)... Although one (of 2) of the Brewferm brews turned out cleaner than the other but still not as good as the S23. One of whic I was VERY pleased with!

All 5 were handled much the same way...

Hangover on a Tuesday.. lol nice one!
I went out last night but up at 6 this am and feeling fine....
:D

S-189 is the Hurlimann yeast from Switzerland . . . Not as clean as
W34/70 which is the Weihenstephan yeast . . . pitch plenty and it is very clean . . . it performs best on a repitch, although I've had good results pitching 40g into 18L and then pitching that 18L into 70L a few days later.
S-23 is clean if very sulphurous, but that does fade with time

Went fine, I have the wort in a settling vessel and I'm going to rack off the break into an FV this morning with the rehydrated yeast.

Agreed W34/70 is very nice on the repitch. Interesting idea about the stepped fermentation.
