Just thought you might be interested in this brew I recently did and drinking it now, and its spot on. It’s a recipe brewed by Tomlinson’s – formerly of Pontefract. My dad worked there and brewed the beer so let me have the recipe. I got the powdered liquorice from a friend who works in a sweet factory.
mash time - 90 min
boil time - 90 min
Mash temp - 65Ëš
80% pale
10% roast barley
10% rolled barley
In a five gallon batch I used;
50g challenger – 90 min
22g bramling cross – 90 min
15g bramling cross – 15 min
20g powdered liquorice
s-04 yeast
the original beer was 6.5% but my mash efficiency must be lower than the brewery and it only ended up 5.2% - still a great stout though!

There’s two sweet factories in Pontey. Haribo a Monkhill confectionery, my mate works at Monkhill but I recon haribo use the same stuff as they make the Pontefract cakes.

it comes through very well, can both smell it and taste it well - the after taste is much like the taste of the sweets. its not too over powering, i think if i put anymore more in it would be too much and would spoil it.

Drank a bottle of this fine stout last night. Very good. Surprisingly easy drinking for a 6%er with a very balanced yet present liquorice flavour. Thanks for the recipe. Will try it one day.
