AG#44 - American Pale Ale

Brewing this today.

American Pale Ale
10-A American Pale Ale

Size: 25.0 L
Efficiency: 80.0%
Attenuation: 80.0%

Original Gravity: 1.052 (1.045 - 1.060)
Terminal Gravity: 1.010 (1.010 - 1.015)
Color: 6.03 (5.0 - 14.0)
Alcohol: 5.49% (4.5% - 6.2%)
Bitterness: 44.5 (30.0 - 45.0)

Ingredients:
5.0 kg Maris Otter Pale Ale Malt - TTS
500 g CaraMalt
100 g Torrified Wheat
35.0 g Chinook (12.7%) - added first wort, boiled 90 min
10 g Chinook (12.7%) - steeped after boil
65 g Amarillo (9.4%) - steeped after boil
65 g Cascade (7.6%) - steeped after boil
White Labs WLP001 California Ale

Mashing at 73c at the minute. Little high? Last time I made a beer with S05 (WLP001 apparently) I ended with a gravity of 1006. :shock: Hopefully doing a high temp mash will end me on 1010...

No flavour additions in this one. Just first wort and steep hopping. Plan is to chill to 80c, add the hops and stir gently for 30 mins. Will keep temp at 80c throughout. Will also recirculate for 30 mins before adding to the fermenter. This will aid clarity and hopefully pull more flavours from those hops. :D

So far so good at this end. Mash done. Going to recirculate for 1hr now. Want this one to be crystal clear ;-)

Chilled down to 20c and recirculating at the minute. Very cloudy which is a little worrying. Will recirculate for an hour... hope it clears up.

Sure did. Thinking the protofloc didn't perform properly because I stopped the chill for 25 mins. Hopefully gelatine will sort it later...

Why do you recirculate till clear?
I don't but I end up with clear beer in the glass.

BTW love the recipe.Will add the to the ever ending list of "to do".

Cheers. Don't usually recirculate in the boiler, but planned to today as I was expecting it to be cloudier than usual.. and was right! Will ferment for 3 weeks, rack with gelatine and leave for another 2 weeks. Few weeks in the bottle then it should be clear.

Really good brew day. Hit my target bang on which was good. Nice way to spend a Sunday. :D

Do you just keep it in the same fermentation vessel with the yeast head on top? or do you change it to a new vessel at anypoint?

Yes, I'll leave it in its current vessel for 3 weeks to ensure a complete ferment. When the Krausen dies down, I'll drop a hydrometer in so that I can check progress easily and without wasting beer! Will then rack to a glass carboy with gelatine for another 2 weeks then bottle after that.

looks good. i had the same issue recently with s05 - wouldn't stop. thought i was gonna end up with vodka! Be interested to find out how this one turns out. Not really related to your beer, but it seems like the citrusy american hops are very popular on here, but i don't really see that reflected in commercial brews. I spend quite a lot of time in the states with work, so i get to try all kinds of american beers that are hard to get over here, but it makes me wonder if there's a massive gap in the market.

A fast growing local brewery down here uses them A LOT.
