Peat Smoked Stout

Myself and my 2 brothers and our partners all try and get home for a couple of days over christmas. Last year I turned up with a corni of 4 shades of stout. Needless to say it went down a storm. This year the parents have asked me to brew a couple of beers for the festive season. One dark, and a light ale as my mum loved the Summer Gold I took home for a family BBQ.

So after much deliberation I have decided to go with a peat smoked stout:

UK Chocolate Malt 0.348 kg 6.9 % 56.9 In Mash/Steeped
UK Wheat Malt 0.298 kg 5.9 % 0.2 In Mash/Steeped
UK Peated Malt 0.200 kg 3.9 % 0.2 In Mash/Steeped
UK Roasted Barley 0.149 kg 2.9 % 34.7 In Mash/Steeped

As has already been pointed out by pdtnc I'm going to sub out the wheat malt, as it'ss not doing much in there with all the flaked barley. I'' up the MO accordingly to keep the OG up. The munich is in cos I have a load to use up :D

this little lot should give it an OG of about 1.053 if I remember correctly! :D

Sounds nice! Used Rauchmalt in a recent porter. Still fermenting. Can't wait till it's ready!!

I'm just waiting to see if BB gets some Peat Smoked malt in...
I have a 1kg of Rauch already for another beer.

I only added 500g of Rauch to mine. Realise now it was probably not enough. LB, is 200g of peat smoked enough? Are you looking for a subtle hint, medium or lots of?

I'm looking for a medium hit. I used 63g (1.5%) in a 20L batch of porter. I found that I was searching for the smoke flavour. So I've decided to go for it with this one. I'm not looking for 'Aecht Schlenkerla Rauchbier Märzen' level of smoke flavour but I want it to be a major player in the flavour.

I have a stout fermenting that has peat smoked malt in and higher IBU's than you'd normally see in a stout. OG was 1070 so it will have plenty of time to condition and the hops to subdue

Initial taste from the sample jar is very good. I used almost 300g of peat smoked malt and the flavour seems very subtle right now

200gms of Peat smoked malt will have a stronger and noticeable taste, more so than rauchmalt IMO. Need to get some myself, haven't made a smoked porter for a couple of years.
