Spitfire clone from the american (see how I insult them with a small A ) book Clone brews.
For 5 (US gallons) or 19ltrs
8.25lb (3.7kg) British 2 row pale malt.
1/4lb (113g) British wheat malt.
1/2lb (230g) 55L British crystal malt.
6oz (170g) toasted 2 row pale malt.
6oz (170g) British amber malt.
4oz (113g) Torrified wheat.
Mash @ 150F (65.5C) for 90 minutes.
90 Minute boil.
1oz (28g) Target @ 8.5 AA (8.5 HBU) bittering hop 90 minutes.
1oz (28g) East Kent goldings. Flavour hop 15 minutes.
1 tsp Irish moss 15 minutes.
1/2oz (14g) east Kent Goldings. 1 minute Arome hop.
the bittering hop rate is for the extract recipe. A note in the all grain version which I have quoted states. Add 6 HBU (30% less than extract recipe) of bittering hops for 90 minutes of the boil.
Yeast Wyeast 1084 Irish Ale yeast.
Ferment at 68-72F (20-22C)
Ferment for 5-7 days in primary, siphon to secondary and add
1/2oz East Kent Goldings. Dry hop.

I just used t58 for a brew and that sulpherous whiff is definitely in their brew. I wonder if it might be a good yeast to use cloning Neame's ales?
I will have to investigate at some point....
