Brewdog Hardcore IPA anyone?

Post by Gricey » Tue Oct 05, 2010 12:02 am

Was at the CAMRA beer festival in Sheffield over the weekend, and for the first time tried BD's Hardcore IPA. I tried their Punk IPA for the first time as well (wanted to try this for ages), but I found I liked Hardcore much, much more.

Anyone got a recipe? I'm aware it would have to be put away for a long time

Not seen anything convincing thus far...

Thanks, had that page but was wondering if anyone had translated it into a malt and hop schedule.

The flavour was out of this world, was like opening a vac pack of hops

Aleman has put a recipe up on thbf although it differs from the recipe brewdog give on that page. I think they changed the recipe so it may reflect an earlier version of the beer. I won't repost it here as you can join that forum for free and AM is around here if he feels like sharing.

Might have to give this a go late in the week/weekend as I can pitch on top of the SNPA cake I'll be freeing up when I bottle this week........ :)

What do people reckon to this? I think my problem will be loss to hop absorption, does anyone have a good guideline for this (other than the generic "3L lost to hops and trub")... also the dry hops will soak up a pile I'm sure (~220g)

Monkey Shot IIPA (Imperial IPA)

Original Gravity (OG): 1.094 (°P): 22.4
Colour (SRM): 16.3 (EBC): 32.1
Bitterness (IBU): 147.2 (Average)

90% Maris Otter Malt
5% Caramalt
5% Crystal 60

4.3 g/L Columbus (14.2% Alpha) @ 90 Minutes (Boil)
4 g/L Centennial (9.7% Alpha) @ 15 Minutes (Boil)
6.7 g/L Simcoe (12.2% Alpha) @ 0 Minutes (Aroma)
5.3 g/L Centennial (9.7% Alpha) @ 0 Days (Dry Hop)
4.7 g/L Columbus (14.2% Alpha) @ 0 Days (Dry Hop)
4.7 g/L Simcoe (12.2% Alpha) @ 0 Days (Dry Hop)

Single step Infusion at 64°C for 90 Minutes. Boil for 90 Minutes

Fermented at 20°C with Repitch onto US-05 Cake

Recipe Generated with BrewMate

Actual amounts I'd be using are (brewhouse efficiency set at 60)
M/O Malt - 6722g
Caramalt - 373g
Crystal 60 - 373g

Columbus - 65g @ 90m
Centennial - 60g @ 15m
Simcoe - 100g @ 30m steep 80ºC at flameout

Dryhopped with
80g Centennial
70g Columbus
70g Simcoe

For a 15l batch, pitched on top of the cake left from my Mysterio's SNPA Clone (fermenting away now)

In other news, how do you repitch, just chuck your wort on top of the previously drained FV? Or do you need to do something to the FV/yeast first...

Know this is ambitious but it's an ambitious beer!

Cheers
Gricey

mmm, I have a very similar one planned for this weekend and I had the same question about repitching. I'm going to add 10% cane sugar to help dry and thin it out a bit, while giving the O.G. a bit of a boost.

Hmm, didn't think of just adding sugar, might make the OG a bit more achievable - had a mare doing the RIS last month I can tell ya!

Use a sterilised metal spoon to get the yeast cake out of your emptied fv and put it in a freshly sterilised fv with the wort from your iipa!

I dont think you are going to achieve the IBU`s you want with your schedule,
The Hardcore IPA is a staggering 150 IBU`s

If you look at the recipe above - Brewmate tells me the above will get 147.2 - not far off and I thought the taste threshold is 5 IBU anyway (so basically equivalent). I can always add a few more grams, I've got 200g of each.

Also the funny thing is I found it less square-mouthingly bitter than the Punk IPA, but I wonder if that was down to the BU:GU ratio - Hardcore is very strong, so maybe it pulls it off by masking the sweetness of such a high gravity.

1.013 at a guess. Their site lists the OG as 1.083, so using an ABV calculator you need about a 70 point drop to get 9.2%.

That said, brewmate said I needed a OG of 1.094 to hit that FG, but I guess thats really down to the attenuation of the yeast.

I only have one 'real' FV, the other is smaller and I use it as a bottling bucket, though I suppose I could sanitise something else and put it in there then do the switcheroo, bit cautious of infection though.

Actually - Mr Malty says I only need 123mL of repitched slurry. Maybe I'll collect an amount around that, seems a fair compromise to just lobbing it on top which I have seen a lot of people whine about.
