Mornin' all,

Just bought the bits for my latest brew from thrifty.

Going into the pot next week will be...

[insert name here] Porter
20 litres

3 kg light spraymalt
500g crystal malt
500g brown malt
250g chocolate malt
250g black malt
100g fuggles (timings to be worked out later)
Nottingham yeast (lush)

I might be tempted to chuck in some muscovado sugar as well to bump up the ABV
or maybe some coffee... :shock: hmmm, Robusta porter? I've had Dark Star Espresso before and that really is something.

Why do I get these ideas at stupid o'clock in the morning?

I really should get some sleep instead of reading up on beer...

That recipe is more like a stout than a porter. I've made coffee stouts which have been inspired by Dark Star. Use good quality ground coffee, or better still, grind the beans yourself! Go for around 25g-30g and add during the last 1 min of the boil. Should give you a lovely subtle coffee flavour.

I'd only use those Fuggles for bittering if you're going for the coffee route. Coffee and the floral notes from the Fuggles probably won't go well together. Then again, they might... who knows!

Coffee stouts are great. Need to get one sorted soon actually.

Some interesting advice there Floyd, I might save the black malt for a kit mod I have planned (Edme stout with added malt and a knuckle-duster punch of espresso). Thinking maybe that I should brew a straightforward porter first, sampling some neat then again with a shot of espresso.
Food for thought...

Also I can't help but notice you're part way through a smoked porter, would I assume you've added rauchmalz to the grist or have you gone for something a little more specialist like a peat-smoked or even home-smoked malt?

Have used Rauchmalt in the porter. Fermenting at a mate's house at the minute. Still early to tell if it was a success or not. I'd love to smoke my own malt and will do so in the future.

I just made a stout following a similar recipe and used fuggles as the late hop addition. :? hope it works out OK. Am going to bottle this weekend, so I can have a sneak preview taste and let you know how it goes if you want me to.

I like the idea of smoking your own malt. I can imagine putting some uncrushed pale malt in a large sieve and suspending it over a BBQ or chiminea filled with something like birch or pine shavings for about half an hour would do it. Methinks an experimental gallon is in order... :twisted:

Okay I started this one off on Thursday, recipe as follows.

Peter Piper picked a peck of pickled porter (20 litres)
OG: 1.062
3kg extra light spraymalt
500g brown malt
500g chocolate malt
250g crystal malt

75g Fuggles (60 mins)
25g Fuggles (20 mins)

Irish moss (15 mins)

Nottingham Yeast pitched at 18C

First full length extract brew, very interested to see how it turns out 8)

You could try it with a few bottles. However, you had late hops in the recipe so I reckon coffee might not work with this brew. Could be wrong though!

Bottled it without coffee. It looked so good, I didnt want to risk a single bottle with a coffee injection at the priming stage. Fatboylard, did you put coffee in yours?

No I decided to leave the coffee out of this one seeing as it's my first porter, although with the amount of chocolate malt thrown in the wort does have roasty coffee notes to it. I'm looking forward to this one!

If you want to know how your stout might taste with coffee, try putting a half shot of espresso or a little good quality instant (i.e. not nescrappé)mixed with just enough water to dilute in your pint pot and top up with stout. You'd be surprised at how well it works!

Anyway, just tried a bottle last night and its really good. Probably the best stout I have made. It doesnt taste like coffee but more like chocolate. Because of this its not really a drinking session beer but rather a nice one to have at the end of the night. Definietly different to coopers stout as it doesnt have the same burnt/ licorice taste.
