Christmas Ale idea?

Considering I am having difficulty in obtaining any info on York's Centurion Ghost ale, I've knocked this up on Promash...

'Christmas Ale'

Brewlength - 20l

Pale Malt - 3.95kg
Crystal - 0.3kg
Choc Malt - 0.25kg
Demerara Sugar - 0.24kg
Torrefied Wheat - 0.10kg

Challenger - 20g at 60 mins
Fuggle - 20g at 60 mins

SG - 1.058
FG est - 1.012
ABV est - 6%
EBC est - 57.8
IBU est - 33.6

The crystal and torrefied are included to use them up before I buy more. As are the hops.

I was thinking of adding some Bramling Cross to impart a slight blackcurrent flavour though. I've also added the sugar as I want the ABV without the 'cloying' of a 6% beer. Would I need to add more sugar based upon the current grain bill?

Sorry mate, never tried such a recipe so can't comment. One thought though; what defines it as 'Christmas' ale?

I think i would have some northdowns for bittering and then challenger and fughles late. maybe some styrians or bobec as well.

In my opinion christmas beers should be full bodies with a nice taste but an alcoholic afterburn :) :evil:

I have used sugar in one of mine and it came out of the fv great, there is some definate taste from the sugar that is not out of place. i used medium demmi. sugar.
